Description

These little strawberry-lime small cakes are an absolute eye-catcher at any party! I especially like to make them in the summer when strawberries are in season. The fruity taste of strawberry-lime liqueur harmonizes perfectly with the sweet dough and the slightly sour jam. The preparation is super easy and thanks to the Thermomix® it is done in a flash. The small cakes are ideal as finger food for birthdays, brunch or just with coffee. If you like, you can use a few fresh strawberries for decoration. A really delicious and uncomplicated recipe!

Ingredients (8 ingredients)

  • 40 g Butter, soft
  • 60 g Sugar, brown
  • 1 piece Egg(s)
  • 80 ml Liqueur, strawberry lime
  • 125 g Flour
  • 0.5 Pck. Baking powder
  • Strawberry jam
  • Powdered sugar

Preparation (4 steps)

Mix ingredients

Thermomix® Setting
20 sec/Speed 4

Add 40 g soft butter, 60 g brown sugar, 1 egg and 80 ml strawberry lime liqueur to the mixing bowl and mix for 20 sec./speed 4. Add 125 g flour and 0.5 packet baking powder and mix for another 20 sec./speed 4 to a smooth dough.

Fill muffins

Place paper liners in the wells of a muffin tin and fill the dough to 2/3 of the height. Place 1 teaspoon of strawberry jam in the middle of each muffin.

Baking

Bake in a preheated oven at 180 °C for approx. 15 - 20 minutes. Remove from the oven and let cool on a wire rack.

Decorate

Dust with some powdered sugar before serving.
