Description

This juicy banana cake is a delicious recipe for cake lovers. Baked with whole wheat flour, spelt flour or rye flour, it is a great alternative to traditional cakes. Preparation takes about 60 minutes and is easy. Ideal for breakfast or dessert.

Ingredients (9 ingredients)

  • 2 piece Bananas
  • 200 g Whole wheat flour/ Spelt flour/ Rye flour
  • 150 g Butter/Margarine
  • 100 g Sugar
  • 2 piece Eggs
  • 1 tsp Ground cinnamon
  • 1.5 tsp Baking powder
  • 1 Msp. Salt
  • Chopped walnuts/ Almonds/ Hazelnuts (optional)

Preparation (7 steps)

Prepare flour mixture

Mix 200g whole wheat flour/ spelt flour/ rye flour, 1.5 tsp baking powder, 1 tsp ground cinnamon and 1 pinch of salt in a bowl and set aside.

Mix margarine and sugar

Put 150g butter/ margarine and 100g sugar in the mixing bowl and mix for 2 min./speed 3 until a creamy mixture is formed.

Add eggs

30 sec/Speed 3

Add 2 eggs one after the other to the mixing bowl and mix for 30 sec./speed 3.

Add bananas

Thermomix® Setting
30 sec/Speed 3

Mash 2 bananas and add to the mixing bowl. Mix for 30 sec./speed 3.

Add flour mixture

Thermomix® Setting
1 min/Speed 3

Add the prepared flour mixture to the mixing bowl and mix for 1 min./speed 3 until a smooth dough is formed.

Baking

Pour the dough into a pre-greased baking pan and bake in a preheated oven at 180°C for approx. 50 minutes.

Optional: Prepare powdered sugar icing

For the powdered sugar icing, mix powdered sugar with water until a viscous icing is formed. Alternatively, an icing made from dark chocolate can also be used.
