Description

These little mocha almond bites are a real treat for coffee lovers! I especially like to make them for Christmas or birthdays because they look so festive and taste simply delicious. The combination of almonds, chocolate and coffee is simply unbeatable. The preparation is a bit more complex, but it's definitely worth it. The little cakes are slightly crispy on the outside and beautifully soft on the inside. With the white chocolate icing and mocha beans, they become a real eye-catcher. An absolute must for anyone who loves coffee and almonds!

Ingredients (9 ingredients)

  • 40 piece pastry wafers
  • 150 g melted white chocolate for icing
  • 40 piece moka beans
  • 50 g starch
  • 3 c à c instant coffee
  • 150 g sugar
  • 300 g crushed almonds
  • 100 g grated chocolate
  • 3 piece egg whites

Preparation (4 steps)

Prepare beaten egg whites

Thermomix® Setting

Preheat the oven to 160°C. Place the 3 egg whites in the mixing bowl and insert the butterfly. Beat for 3 min./speed 3.5 until stiff. Remove the butterfly and transfer the beaten egg whites.

Prepare dough

Thermomix® Setting
20 sec/Speed 3

Add the beaten egg whites, 150g sugar, 300g ground almonds, 100g grated chocolate, 3 tsp instant coffee and 50g cornstarch to the mixing bowl and stir for 20 sec./speed 3.

Shape and bake macarons

Use 2 teaspoons to cut off small balls of dough and place on the 40 wafers. Spread the macarons on a baking sheet and bake in the preheated oven for 20 minutes.

Decorate

Thermomix® Setting
3 min/122°F/Speed 2 50

Let the macarons cool. Put white chocolate in the mixing bowl and melt for 3 min./50°C/speed 2. Pour the melted chocolate over the macarons and immediately place 1 moka bean on each macaron. Let the chocolate dry.
