Description

These coconut chocolate piles are an absolute must for all lovers of coconut and chocolate! I make them every year at Christmas time, but of course they also taste good all year round. The combination of the juicy shredded coconut and the dark chocolate is simply irresistible. They are nice and soft on the inside and slightly crispy on the outside. The preparation is a bit time-consuming, but it's definitely worth it! Perfect with coffee or tea, or just for snacking.

Ingredients (6 ingredients)

  • 3 piece Egg white (size M)
  • 200 g Sugar
  • 1 Pck. Vanilla sugar
  • 250 g Shredded coconut
  • 1 tbsp Flour
  • 100 g Bittersweet chocolate

Preparation (5 steps)

Whisk egg whites until stiff

Thermomix® Setting
3 min/Speed 3.5

Insert the butterfly. Add 3 egg whites to the mixing bowl and whisk until stiff for 3 min./speed 3.5. Transfer the egg whites and remove the butterfly.

Add sugar and vanilla sugar

Add 200 g sugar and 1 pack of vanilla sugar to the egg whites and carefully fold in.

Mix shredded coconut, flour and chocolate

Mix 250 g shredded coconut, 1 tbsp flour and 100 g bittersweet chocolate in a separate bowl.

Mix ingredients

Carefully fold the shredded coconut mixture into the egg whites.

Bake

Place the dough in small piles on 2 baking sheets lined with baking paper and bake one after the other in a preheated oven (electric oven: 150 °C/ convection oven: 125 °C/ gas: level 1) for approx. 25 minutes. Remove the macaroons from the baking sheet and let them cool on a wire rack.
