Description

This Moroccan chicken dish is a flavorful and hearty meal, perfect for a cozy autumn evening. The combination of tender chicken, sweet butternut squash, and tart dried cherries creates a delightful balance of flavors. I've been making this recipe for years, and it's always a hit with my family. The spices add a warm and inviting aroma to the kitchen. Serve it with couscous and a dollop of natural yogurt for a complete and satisfying meal. It's also great for meal prepping!

Ingredients (15 ingredients)

  • 4 piece boneless, skinless chicken breasts
  • 3 tbsp olive oil
  • 2 piece onions
  • 100 g tomatoes
  • 100 g ginger
  • 3 clove garlic
  • 1 tsp turmeric
  • 1 tbsp ground cumin
  • 1 piece large butternut squash
  • 600 ml chicken stock
  • 2 tbsp brown sugar
  • 2 tbsp red wine vinegar
  • 100 g dried cherries
  • 1 piece small red onion
  • 100 g feta cheese

Preparation (8 steps)

Prepare Chicken

Season 4 boneless, skinless chicken breasts with salt and pepper. Heat 2 tbsp olive oil in a flameproof dish on the stovetop. Brown the chicken on all sides and remove to a plate.

Make the Paste

Thermomix® Setting
10 sec/Speed 5

Add 1 chopped onion, 100g tomatoes, 100g chopped ginger and 3 garlic cloves to the mixing bowl. Process for 10 Sec./Stufe 5 to create a rough paste.

Sauté Aromatics

Heat 1 tbsp olive oil in a flameproof dish on the stovetop. Fry 1 sliced onion until softened. Add 1 tsp turmeric, 1 tbsp ground cumin, 1 tbsp coriander and 1 tbsp cinnamon and fry for 1 min more until fragrant. Add the paste from the Thermomix and fry for another few mins to soften.

Combine Ingredients

Return the chicken to the dish with 1 large butternut squash, cut into big chunks, 600ml chicken stock, 2 tbsp brown sugar and 2 tbsp red wine vinegar.

Simmer

Bring to a simmer on the stovetop, then cook for 30 mins until the chicken is cooked through.

Add Cherries and Shred Chicken

Lift the chicken out and stir in 100g dried cherries, then continue simmering the sauce on the stovetop to thicken while you shred the chicken into bite-sized chunks. Stir the chicken back into the sauce and season with salt and pepper.

Prepare Topping

Mix 1 finely chopped small red onion, the zest of 1 lemon, a handful of mint leaves and 100g crumbled feta cheese in a bowl.

Serve

Scatter the topping over the dish, then serve with couscous and natural yogurt.
