Description

This dish of mussels with cream and herbs is a real delight, perfect for a quick and tasty dinner. I love preparing this recipe, because it is simple and always appreciated. The mussels, cooked in a broth flavored with white wine, bay leaf and thyme, are coated in a creamy and lemony sauce. A real treat! Accompanied by crispy fries, it's a complete and convivial meal. Don't hesitate to add a pinch of chili to enhance the taste. Ideal for an evening with friends or a family meal.

Ingredients (10 ingredients)

  • 1 kg Mussel(s)
  • 1 piece Onion(s)
  • 20 g Sweet butter
  • 5 cl Dry white wine
  • 2 c. à soupe Thick fresh cream
  • 1 piece Egg yolk(s)
  • 0.5 piece Lemon juice
  • 4 feuilles Bay leaf
  • 2 brin(s) Thyme
  • 3 c. à soupe Chopped parsley

Preparation of mussels and onion

Rinse and scrape 1 kg of mussels carefully. Peel 1 onion and cut it in half. Put the onion in the Thermomix bowl and chop it for 3 Sek./Stufe 5.

Cooking onion and herbs

Add 20 g of sweet butter to the bowl with the chopped onion. Cook for 3 Min./120°C/Stufe 1.

Adding white wine and herbs

10 sec/212°F/Speed 1 100

Add 4 bay leaves and 2 sprigs of thyme to the bowl. Pour in 5 cl of dry white wine. Bring to a boil for 10 Sek./100°C/Stufe 1.

Cooking mussels

5 min/212°F/Speed 1 100

Add 1 kg of mussels to the bowl. Close the lid and cook for 5 Min./100°C/Stufe 1. Make sure the mussels open during cooking.

Preparation of the cream sauce

Meanwhile, in a bowl, whisk 2 tbsp of thick fresh cream with 1 egg yolk and 0.5 lemon juice. Set aside.

Adding cream and parsley

Thermomix® Setting
1 min/194°F/Linkslauf Speed 1 90 Reverse

Once the mussels are cooked and opened, pour the cream mixture into the bowl. Add 3 tbsp of chopped parsley. Mix gently for 1 Min./90°C/Linkslauf Stufe 1 to thicken the sauce.

Service

Serve the mussels immediately with fries. Do not salt, the mussels are salty enough.
