Description

This fruity and spicy redcurrant mustard, prepared in the Thermomix®, refines grilled dishes and more. Redcurrants, mustard and balsamic vinegar ensure a special taste experience. The recipe is vegetarian, gluten-free and lactose-free. In just 20 minutes, about 22 servings of this delicious sauce are created, ideal as a dip, with cheese or as an accompaniment to the main course.

Ingredients (11 ingredients)

  • 250 g redcurrants
  • 4 EL balsamic vinegar
  • 100 g brown sugar
  • 1 Pck. Bourbon vanilla sugar
  • 1 Pck. grated orange zest
  • 2 EL orange juice
  • 80 g fresh figs
  • 1 TL coarse-grained mustard, e.g. Rotisseur mustard
  • 1 Msp. preserving aid
  • salt
  • pepper

Preparation (5 steps)

Prepare redcurrants

Wash the redcurrants and strip them from the panicles with a fork. Puree the redcurrants and press through a sieve to obtain 150 g of berry puree.

Cook the redcurrant mustard

Put vinegar, sugar, vanilla sugar, berry puree, grated orange peel and orange juice in the mixing bowl and cook for 10 min./100°C/speed 1.

Add figs

Thermomix® Setting

Peel the figs, cut into small cubes and add to the mixing bowl. Cook for 5 min./100°C/speed 1.

Stir in mustard and preserving aid

Thermomix® Setting
1 min/122°F/Gentle stir speed 122°F

Add mustard and preserving aid and stir in for 1 min./50°C/speed Soft stir. Season with salt and pepper.

Filling

Pour immediately into prepared jars and close with screw caps (twist-off).
