Description

These melon muffins are a delightful summer treat! The combination of sweet cantaloupe and crunchy pecan crumble is simply irresistible. I've been making these for years, and they're always a hit at brunch or as a sweet snack. The muffins are moist and flavorful, and the pecan topping adds a wonderful texture. They're perfect for using up extra cantaloupe during the summer months. Feel free to add a pinch of nutmeg to the batter for an extra layer of flavor. These are best enjoyed fresh, but they also freeze well for later!

  • 0.75 cup chopped pecans
  • 0.5 cup brown sugar
  • 0.5 cup all-purpose flour
  • 3 tablespoons butter, softened
  • 1 cup white sugar
  • 0.5 cup vegetable oil
  • 2 piece eggs
  • 1 cup pureed cantaloupe
  • 1.5 teaspoons vanilla extract
  • 1.5 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 0.5 teaspoons salt
  • 0.5 cup finely diced cantaloupe
  • 1 teaspoon lemon zest, or to taste

Preparation (7 steps)

Prepare the pecan crumble topping

Add chopped pecans, brown sugar, and flour to the mixing bowl. Add softened butter and mix until the mixture is crumbly. Transfer to a separate bowl and set aside.

Mix sugar and oil

Bake the muffins

Preheat oven to 350 degrees F (175 degrees C). Grease 10 jumbo muffin cups or line with paper muffin liners. Pour batter into prepared muffin cups. Bake in the preheated oven for 25 minutes. Remove from oven and sprinkle pecan mixture over the top of each muffin. Continue baking until a toothpick inserted into the center comes out clean, about 10 more minutes. Cool in the pan for 10 minutes before removing to cool completely on a wire rack.
