Description

These soft muffins with pears are a real comfort food, perfect for breakfast or a snack. The recipe is very simple and quick to prepare with the Thermomix®. The dough, enriched with lemon zest, smells good and the diced pears give a moist and delicious texture. I love them because they are ready in less than half an hour and everyone always likes them! You can also add a pinch of cinnamon for a more autumnal touch. Ideal to enjoy warm, perhaps accompanied by a cup of hot tea. Try them, you won't regret it!

Ingredients (9 ingredients)

  • 2 piece eggs
  • 100 g sugar
  • 100 ml seed oil
  • 100 ml milk
  • 1 limoni the grated zest
  • 270 g flour 00
  • 8 g baking powder
  • 300 g pears
  • almond flakes

Preparation (4 steps)

Eggs, sugar, oil, milk and lemon zest in the bowl

Thermomix® Setting
20 sec/Speed 4

Insert 2 eggs, 100 g of sugar, 100 ml of seed oil, 100 ml of milk and the grated zest of 1 lemon into the bowl. Mix for 20 Sec./Speed 4.

Addition of flour and baking powder

Thermomix® Setting
30 sec/Speed 5

Add 270 g of flour 00 and 8 g of baking powder to the bowl. Mix for 30 Sek./Speed 5.

Incorporate the pears

Thermomix® Setting
10 sec/Linkslauf/Speed 2 Reverse

Peel and dice 300 g of pears. Add the diced pears to the bowl and mix gently with the spatula for 10 Sek./Reverse/Speed 2.

Preparation and baking

Line a muffin tin with paper liners. Pour about two scant tablespoons of batter into each liner, filling them to about 2/3 of their capacity. Decorate the surface of each muffin with almond flakes as needed. Bake in a preheated fan oven at 170°C for 25 minutes or until golden brown.
