Description

These Thermomix® blueberry muffins with yogurt are an ideal breakfast, dessert, or finger food. The main ingredients are blueberries, yogurt, eggs, and flour. The recipe is vegetarian and belongs to the Cakes category. In just 35 minutes, 12 juicy muffins are ready. Perfect for light cooking or as a sweet treat for the whole family.

Ingredients (8 ingredients)

  • 2 Stück Eggs, size M
  • 300 g Blueberries - fresh or frozen
  • 300 g Flour, Type 405
  • 200 g Whole milk yogurt - 3.5; 3.8% or 10% fat
  • 150 g Sugar
  • 100 ml Vegetable oil, neutral
  • 3 TL Baking powder
  • 1 Päckchen Bourbon vanilla sugar

Preparation (8 steps)

Preheat oven and prepare muffin tins

Preheat the oven to 180 °C top/bottom heat (convection 160 °C). Prepare a muffin tin with 12 cups and line with 12 muffin paper liners. Wash and drain the 300 g blueberries. This step is done without the Thermomix.

Mix dry ingredients

Put 300 g flour, 150 g sugar, 3 tsp baking powder (11g) and 1 packet of bourbon vanilla sugar into the mixing bowl and mix for 10 sec/speed 4.

Transfer dry ingredients

Pour the dry ingredients from the mixing bowl into a separate bowl. The mixing bowl is needed for the wet ingredients.

Mix wet ingredients

Thermomix® Setting
20 sec/Speed 3

Put 2 eggs, 100 ml vegetable oil and 200 g yogurt into the mixing bowl and mix for 20 sec/speed 3.

Combine dry and wet ingredients

30 sec/Speed 3

Add the dry ingredients to the wet ingredients in the mixing bowl and mix for 30 sec/speed 3. Be careful not to overmix the batter.

Fold in blueberries

Gently fold the 300 g blueberries into the batter in the mixing bowl using a spatula. Perform this step without the Thermomix to avoid damaging the berries.

Fill muffin cups with batter

Immediately distribute the batter into the 12 muffin paper liners using an ice cream scoop (or two tablespoons). This step is done without the Thermomix.

Bake muffins

Bake the muffins for 25-30 minutes on the middle rack in the preheated oven. At the end, use a toothpick to check if the batter is cooked through. This step is done without the Thermomix.
