Preparation (8 steps)

Preparation of the eggplants

Remove the ends from the eggplants and cut them into cubes. Put the cubes in a bowl with salt and let them rest for 30 minutes to eliminate the bitter water.

Frying the eggplants

Rinse the eggplants well under running water and squeeze them with your hands to eliminate excess water. Fry the eggplants in abundant extra virgin olive oil in a pan until golden brown. Drain them on absorbent paper.
