Description
This simple fruit cake is a classic for Sunday afternoons. Topped with fresh fruit, it is a delicious cake for the whole family. Preparation in the Thermomix® is quick and easy. The cake is ideal for summer and can be varied with different types of fruit. The baking time is about 30 minutes.
Ingredients (9 ingredients)

120 g Sugar

140 g Flour

1 Päckchen Vanilla sugar

0.5 Päckchen Baking powder

50 g Oil
-
2 Stück Eggs
-
3 EL Water
-
Lemon zest
-
Fruit (of your choice)
Preparation (6 steps)
Mix sugar, flour, vanilla sugar and baking powder
Put 120g sugar, 140g flour, 1 packet of vanilla sugar and 0.5 packet of baking powder into the mixing bowl and mix for 10 sec./level 4.
Add oil, eggs, water and lemon zest and stir
Add 50g oil, 2 eggs, 3 tbsp water and lemon zest (to taste) to the mixing bowl to the remaining ingredients and mix for 20 sec./level 4.
Beat egg whites
Insert the stirring attachment/butterfly. Put egg whites in the mixing bowl and beat until stiff for 3 min./level 3.5.
Fold in egg whites
Carefully fold the egg whites into the batter in the mixing bowl with a spatula. Remove the stirring attachment/butterfly.
Pour batter onto baking sheet or baking pan and top with fruit
Pour the batter onto a greased baking sheet or into a greased baking pan and top with any fruit you like.
Bake
Bake the cake in a preheated oven at 180°C top/bottom heat for approx. 30 minutes. The baking time may vary depending on the oven.
