Description

This Thermomix® recipe for fried rice noodles with shrimps is a quick and hearty main course of Asian cuisine. The main ingredients are rice noodles, garlic, shallots, palm sugar and tamarind paste. In 45 minutes, of which 30 minutes is working time, two portions can be prepared with the Thermomix®. Ideal for student cuisine and anyone who loves a spicy dish with shrimps.

Ingredients (14 ingredients)

  • 140 g Rice noodles
  • 3 Stk. Garlic cloves
  • 2 Stk. Shallots
  • 3 EL Palm sugar
  • 3 EL Water
  • 2 EL Tamarind paste
  • 2 EL Fish sauce
  • 2 EL Rapeseed oil
  • 200 g Shrimps
  • 1 TL Chili flakes
  • 2 Stk. Eggs
  • 100 g Mung bean sprouts
  • Limes
  • Peanuts

Preparation (10 steps)

Prepare rice noodles

Soak 140 g rice noodles in hot (not boiling) water for 10 - 15 minutes, depending on the thickness, until they are pliable. Then rinse with cold water and set aside.

Chop garlic and shallots

Place 3 garlic cloves in the mixing bowl and chop for 3 sec./speed 7. Scrape down with the spatula.

Chop shallots

Add 2 shallots and chop for another 3 sec./speed 5. Scrape down with the spatula.

Sauté garlic and shallots

Add 2 tbsp rapeseed oil to the mixing bowl and sauté for 3 min./120°C/speed 1.

Prepare sauce

Thermomix® Setting
5 min/212°F/Speed 2 100

Add 3 tbsp palm sugar, 3 tbsp water, 2 tbsp tamarind paste and 2 tbsp fish sauce to the mixing bowl and cook for 5 min./100°C/speed 2.

Pour sauce out

Pour the sauce out of the mixing bowl and set aside.

Fry shrimps

Fry 200 g shrimps in a separate pan with some oil until they are cooked. Then remove and set aside.

Finish Pad Thai

Add the sautéed garlic and shallots, 1 tsp chili flakes, the soaked rice noodles and the prepared sauce to the mixing bowl and mix for 5 min./100°C/reverse rotation speed 2. If necessary, add some water to achieve the desired consistency.

Let the eggs set

Push the noodles to the side in the mixing bowl. Add 2 eggs to the mixing bowl and let them set for 2 min./100°C/speed 2.

Finish and Serve

1 min/212°F/Linkslauf Speed 1 100 Reverse

Stir in 100 g mung bean sprouts and the fried shrimps and heat for 1 min./100°C/reverse rotation speed 1. Serve the Pad Thai with lime wedges and peanuts.
