Description

Seafood fideuá is a traditional Catalan dish that always triumphs at home. This version, prepared with the Thermomix®, greatly facilitates the preparation and guarantees a delicious result. The secret is in the sauté and in the fish broth, which give it an intense and authentic flavour. I usually use thin noodles, which cook very quickly and are perfect. It is ideal for a special meal or to surprise your guests. Go ahead and try it, you'll love it! Also, it is a very versatile recipe, you can add other seafood such as clams or crayfish. Enjoy!

Ingredients (16 ingredients)

  • 200 g Thin noodle
  • 2 clove Garlic
  • 35 g Onion
  • 15 g Red pepper
  • 15 g Italian green pepper
  • 30 g Crushed tomato
  • 1 tsp Sweet paprika
  • 600 ml Fish stock or fumet
  • 1 varias hebras Saffron
  • 75 g Monkfish
  • 1 piece Medium squid
  • 12 piece Prawn tails
  • 12 piece Steamed open mussels
  • 1 piece Extra virgin olive oil
  • 1 piece Salt
  • 1 piece Ground black pepper

Preparation of the ingredients

Cut the monkfish into cubes and the squid into slices. Set aside. Open the mussels to steam and set aside. Peel the prawn tails and set aside.

Initial sauté

Peel the garlic cloves and the onion. Place the garlic in the bowl and chop 3 Sec./Speed 7. Add the chopped onion, the red pepper and the Italian green pepper, both chopped, and chop 5 Sec./Speed 5. Lower the remains of the walls of the bowl with the spatula.

Complete sauté

Thermomix® Setting
8 min/248°F/Speed 1 120

Add 4 tbsp of extra virgin olive oil to the bowl and sauté 8 Min./120°C/Speed 1. Incorporate the crushed tomato and cook 5 Min./120°C/Speed 1, without the measuring cup, to favour evaporation.

Flavour the sauté

Add the sweet paprika and the saffron threads to the sauté. Mix 10 Sec./Speed 2.

Toast the noodles

Thermomix® Setting
5 min/248°F/Speed 1 120

Incorporate the noodles into the bowl and sauté 5 Min./120°C/Speed 1, without the measuring cup, stirring with the spatula so that they toast evenly.

Cook the fideuá

Thermomix® Setting
12 min/212°F/Speed 1 100

Pour the fish stock into the bowl. Add the monkfish and the squid. Program 12 Min./100°C/Speed 1. Correct salt and pepper if necessary.

Add the mussels and prawns

Thermomix® Setting
3 min/212°F/Speed 1 100

Add the mussels and prawn tails to the bowl. Cook 3 Min./100°C/Speed 1. Serve immediately.
