Description

These Nuremberg Elisen gingerbread cookies, prepared in the Thermomix®, are festive pastries with almonds, hazelnuts, walnuts, candied orange peel and candied lemon peel. Preparation takes a total of 240 minutes, with an active working time of around 45 minutes for approx. 60 gingerbread cookies. Ideal for the Christmas season and suitable as a sweet finger food or dessert. A recipe for lovers of nutty biscuits and traditional Christmas pastries.

Ingredients (15 ingredients)

  • 200 g Almonds, ground
  • 100 g Hazelnuts, ground
  • 100 g Walnuts, ground
  • 100 g Candied orange peel
  • 100 g Candied lemon peel
  • 3 piece Eggs
  • 250 g Sugar
  • 50 g Honey
  • 1 tsp Cinnamon
  • 0.5 tsp Cloves, ground
  • 0.5 tsp Nutmeg, ground
  • 0.25 tsp Cardamom, ground
  • 60 piece Wafers (70 mm Ø)
  • 150 g Icing sugar
  • 2 tbsp Lemon juice

Preparation (8 steps)

Grind almonds, hazelnuts and walnuts

Prepare wafers

Place wafers on a baking tray lined with baking paper.

Put the dough on the wafers with a spoon or piping bag and spread evenly.

Bake gingerbread cookies

Bake the gingerbread cookies in a preheated oven at 175°C top/bottom heat for approx. 20-25 minutes. After baking, let cool on a wire rack.

Prepare glaze (optional)

Nuremberg Elisen gingerbread – a scent that awakens childhood memories and inevitably increases the anticipation of Christmas. I still remember the Advent Sundays at my grandmother's, where the whole kitchen table was covered with ingredients for these delicacies. It was a family ritual in which everyone helped, and the scent of cinnamon, cloves and roasted nuts filled the whole apartment. The quality of the ingredients is crucial for Elisen gingerbread. The almonds, hazelnuts and walnuts form the heart and provide the nutty taste and the fine texture. Make sure to use high-quality, unpeeled almonds, as they have a more intense aroma. Candied orange peel and candied lemon peel bring a fruity note and a slightly bitter complexity into play. It is best to use untreated fruits to avoid unwanted additives. The spices – cinnamon, cloves, nutmeg and cardamom – are the soul of the gingerbread. They give it warmth, depth and the unmistakable Christmas character. Honey provides the necessary sweetness and moisture, while the eggs hold the ingredients together. The Thermomix® makes preparation much easier. Grinding the nuts and chopping the candied orange peel and candied lemon peel is effortless and even. When grinding the nuts, be careful not to mix for too long, as they can become oily. The reverse function is important when stirring in the ingredients so as not to chop the nuts and fruits too much. Spread the dough evenly on the wafers. A piping bag can be very helpful here. For a vegan version, the eggs can be replaced with applesauce or flaxseed egg. Instead of honey, agave syrup or maple syrup can be used. You can also experiment with other spices such as anise or ginger to give your gingerbread a personal touch. Serve the Elisen gingerbread with a cup of coffee or tea. They also go perfectly with a glass of mulled wine or a dessert wine. A scoop of vanilla ice cream or a dollop of whipped cream rounds off the taste experience. The gingerbread cookies can be stored in a tin, kept cool and dry, for several weeks. You can also prepare them well in advance and keep the dough in the refrigerator for a few days.
