Description

These Nuremberg Elise gingerbreads, prepared in the Thermomix®, are a festive pastry with almonds, hazelnuts, walnuts, candied orange peel and candied lemon peel. The preparation takes a total of 240 minutes, the active working time is about 45 minutes. The recipe yields approximately 60 gingerbreads and is ideal for the Christmas season or as a special dessert. Suitable for lovers of nutty pastries and traditional recipes.

Ingredients (15 ingredients)

  • 200 g Almonds, ground
  • 100 g Hazelnuts, ground
  • 100 g Walnuts, ground
  • 100 g Candied orange peel
  • 100 g Candied lemon peel
  • 3 Stück Eggs
  • 250 g Sugar
  • 50 g Honey
  • 1 TL Cinnamon
  • 0.5 TL Cloves, ground
  • 0.5 TL Nutmeg, ground
  • 0.25 TL Cardamom, ground
  • 60 Stück Wafer sheets (70 mm Ø)
  • 150 g Icing sugar
  • 2 EL Lemon juice

Preparation (8 steps)

Grind almonds, hazelnuts and walnuts

Add almonds, hazelnuts and walnuts to the mixing bowl and grind for 15 sec/speed 8. Transfer and set aside.

Chop candied orange peel and candied lemon peel

Add candied orange peel and candied lemon peel to the mixing bowl and chop for 8 sec/speed 6. Transfer and set aside.

Mix eggs, sugar and honey

Add eggs, sugar and honey to the mixing bowl and mix for 2 min/speed 3.

Add spices, nuts, candied orange peel and candied lemon peel

Add spices, ground nuts, chopped candied orange peel and candied lemon peel and stir in for 30 sec/reverse/speed 2.

Prepare wafer sheets

Place wafer sheets on a baking tray lined with baking paper.

Spread dough on wafer sheets

Place dough on the wafer sheets with a spoon or piping bag and spread evenly.

Bake gingerbread

Bake the gingerbread in a preheated oven at 175°C top/bottom heat for approx. 20-25 minutes. After baking, let cool on a wire rack.

Prepare glaze (optional)

For the glaze, add icing sugar and lemon juice to the mixing bowl and mix for 20 sec/speed 3. Brush the cooled gingerbread with it or cover with chocolate.
