Description

This creamy mushroom sauce is a vegetarian dish that is ideal as a side dish or sauce for pasta, rice or potatoes. Prepared with fresh mushrooms, onions, parsley and cream, it is ready in just 25 minutes. The sauce is easy to prepare and is perfect for a quick and hearty lunch or dinner. Prepared in the Thermomix®.

Ingredients (10 ingredients)

  • 600 g brown or white mushrooms
  • 1 mittelgroße Onion
  • 0.5 Bund smooth parsley
  • 2 EL Oil
  • Salt
  • Pepper
  • Nutmeg
  • 1 EL Flour
  • 300 ml Vegetable broth (instant)
  • 200 ml Whipping cream

Preparation (9 steps)

Prepare mushrooms

Clean the mushrooms and cut into slices. Set aside.

Prepare onion and parsley

Peel and quarter the onion. Wash the parsley, shake dry and chop coarsely.

Chop onion

Put the onion in the mixing bowl and chop for 3 seconds/speed 5. Use the spatula to scrape down from the edge.

Sauté onion

Add 2 tbsp of oil to the onions in the mixing bowl and sauté for 3 minutes/120°C/speed 1.

Add and season mushrooms

Add the sliced mushrooms to the mixing bowl and season with salt, pepper and nutmeg. Sauté for 5 minutes/120°C/reverse rotation speed 1.

Add flour

1 min/212°F/Linkslauf Speed 1 100 Reverse

Add 1 tbsp of flour to the mixing bowl and sweat for 1 minute/100°C/reverse rotation speed 1.

Pour in broth and cream

Thermomix® Setting
3 min/212°F/Speed 2 100

Pour 300 ml vegetable broth and 200 ml whipping cream into the mixing bowl and simmer for 3 minutes/100°C/speed 2.

Season and add parsley

Thermomix® Setting
10 sec/Linkslauf Speed 1 Reverse

Season the sauce with salt and pepper. Add half of the chopped parsley to the mixing bowl and stir in for 10 seconds/reverse rotation speed 1.

Serve

Serve the creamy mushroom sauce and sprinkle with the remaining parsley.
