Description

These delicate oat and pecan lace cookies are a delightful treat, perfect for sharing during the holidays or enjoying with a cup of coffee. The combination of oats, pecans, and a hint of vanilla creates a wonderfully nutty and slightly chewy texture. Sandwiching them with a smooth hazelnut spread elevates these cookies to a truly special dessert. I've been making these for years, and they always disappear quickly! They're surprisingly easy to make, though you do need to watch them carefully in the oven. These cookies are best enjoyed fresh, but they can also be stored in an airtight container for a few days.

Ingredients (9 ingredients)

  • 226 g butter, melted
  • 200 g white sugar
  • 220 g light brown sugar
  • 2 piece eggs
  • 1 tsp vanilla extract
  • 225 g quick-cooking oats
  • 110 g ground pecans
  • 1 tsp baking powder
  • 368 g chocolate-hazelnut spread

Preparation (7 steps)

Preheat Oven and Prepare Baking Sheets

Preheat the oven to 175°C (350°F). Line 2 baking sheets with silicone baking mats or aluminum foil, shiny side down. This step is done outside of the Thermomix to prepare for baking.

Melt Butter

Place 1 cup (226g) of butter into the Thermomix bowl and melt for 3 Min./50°C/Stufe 2.

Combine Sugars and Eggs

Thermomix® Setting
20 sec/Speed 3

Add 1 cup (200g) of white sugar and 1 cup (220g) of light brown sugar to the melted butter in the Thermomix bowl. Add 2 eggs, one at a time, and 1 tsp of vanilla extract. Mix for 20 Sek./Stufe 3.

Add Dry Ingredients

15 sec/Speed 2/Linkslauf Reverse

Add 2 ½ cups (225g) of quick-cooking oats, 1 cup (110g) of ground pecans, and 1 tsp of baking powder to the Thermomix bowl. Mix for 15 Sek./Stufe 2/Linkslauf.

Drop Batter onto Baking Sheets

Drop batter onto the prepared sheets, 1 teaspoon at a time, spaced 3 inches apart. This step is done outside of the Thermomix to prepare the cookies for baking.

Bake Cookies

Bake in the preheated oven, watching very carefully, until edges just start to brown, 6 to 8 minutes. Keep cookies on the baking sheets; they will finish baking as they cool and harden. Cool completely before removing from the baking sheets, at least 10 minutes. This step is done outside of the Thermomix.

Assemble Sandwich Cookies

Choose 2 cookies that are the same size. Spread chocolate-hazelnut spread very thinly on 1 cookie and sandwich the other on top. Continue until all the cookies are paired and filled. This step is done outside of the Thermomix.
