Description

This hearty vegetable omelet is a great start to the day! I like to make it on the weekend for a leisurely brunch. The combination of zucchini, eggplant, bell pepper and mushrooms makes the omelet particularly aromatic and filling. The salami provides a hearty note that harmonizes perfectly with the creamy mozzarella. It is super easy to prepare and doesn't take long. If you like, you can add fresh herbs such as parsley or chives. An absolute favorite recipe that is well received by the whole family!

Ingredients (11 ingredients)

  • 1 piece Zucchini
  • 1 piece Eggplant
  • 4 piece Mini bell pepper
  • 4 piece Mushrooms
  • 4 slice Salami
  • 0.5 piece Onion
  • 50 g Butter
  • 4 piece Eggs (size L)
  • to taste Salt
  • to taste Pepper
  • 200 g Mozzarella grated

Preparation (6 steps)

Prepare vegetables and salami

Cut zucchini, eggplant, bell pepper, mushrooms and salami into small pieces. Peel and halve the onion.

Chop onion

Put half the onion in the mixing bowl and chop for 3 sec./level 5. Push down with the spatula.

Sauté vegetables

Add 50 g butter to the mixing bowl and sauté together with the chopped onion for 3 min./120°C/level 1.

Add vegetables and salami

Thermomix® Setting
5 min/248°F/Linkslauf Speed 1 120 Reverse

Add zucchini, eggplant, bell pepper, mushrooms and salami to the mixing bowl and sauté for 5 min./120°C/reverse rotation level 1.

Whisk and season eggs

Whisk the eggs in a bowl, season with salt and pepper and add to the mixing bowl.

Prepare omelet

5 min/194°F/Linkslauf Speed 1 90 Reverse

Add 200 g of grated mozzarella to the mixing bowl and stir in for 5 min./90°C/reverse rotation level 1 until the cheese has melted.
