Description

This orange polenta cake is a poem! I especially like to bake it in winter, when it's orange season. The combination of juicy polenta, aromatic almonds and the fresh taste of oranges is simply unbeatable. The cake is gluten-free and perfect for birthdays or a cozy brunch. With the Thermomix® preparation is very easy and quick. An absolute must for all cake lovers! If you like, you can sprinkle it with some icing sugar.

Ingredients (6 ingredients)

  • 13 g Oil for the mold and for the baking sheet
  • 345 g Maple syrup
  • 200 ml Oil
  • 6 piece Eggs, size M
  • 270 g Almond flour
  • 180 g Polenta, fine

Preparation (7 steps)

Prepare mold and preheat oven

Grease a 24 cm diameter springform pan with some oil and line with baking paper. Also coat the baking paper with oil. Preheat the oven to 160°C top/bottom heat.

Prepare orange syrup

8 min/212°F/Speed 1 100

Squeeze the juice from 5 oranges to obtain approximately 100 ml of juice. Add this to the mixing bowl together with 100 g of maple syrup and cook for 8 min./100°C/speed 1 without a measuring cup. Then transfer and set aside.

Mix liquid ingredients

2 min/Speed 4

Add the remaining 245 g of maple syrup and 200 ml of oil to the mixing bowl and mix for 2 min/speed 4. Then add the 6 eggs and mix for another 2 min/speed 4.

Add orange zest

Thermomix® Setting
10 sec/Speed 3

Grate the zest of 3 oranges and add to the mixing bowl. Stir in for 10 seconds/speed 3.

Incorporate dry ingredients and orange juice

Thermomix® Setting
30 sec/Speed 4

Add 270 g of almond flour and 180 g of polenta to the mixing bowl. Squeeze the juice from the grated oranges and add as well. Mix everything for 30 seconds/speed 4 until a homogeneous dough is formed.

Bake cake

Pour the finished dough into the prepared springform pan and bake in the preheated oven for about 45 minutes.

Garnish cake

Let the cake cool and carefully remove it from the mold. To serve, garnish with the remaining peeled and filleted oranges and the prepared syrup.
