Description

This dish is a delicious combination of fresh broccoli, crunchy pistachios and hearty sausage. The orecchiette, also known as ear-shaped pasta, perfectly capture the creamy pesto sauce. I like to make this recipe when I need to be quick, but still want something special on the table. The broccoli provides a pleasant freshness, while the pistachios give the pesto a fine nutty note. The sausage gives the dish a hearty component. A great dish for the whole family!

Ingredients (13 ingredients)

  • 500 g Broccoli
  • to taste Salt
  • to taste Pepper
  • 1 piece Onion
  • 30 g Pistachio kernels
  • 1 clove Garlic
  • 80 g Parmesan or vegetarian hard cheese (piece)
  • 2 tbsp Crème fraîche
  • 1 tsp Medium-hot mustard
  • 100 ml Olive oil
  • 1 tbsp Olive oil
  • 400 g Orecchiette pasta (ear-shaped pasta)
  • 2 piece Salsicce (à ca. 100 g; coarse Italian sausage)

Prepare broccoli

Clean, wash and divide 500 g broccoli into florets. Peel and finely chop broccoli stalks. Place florets and stalks in the Varoma. Add 1 liter of water to the mixing bowl, attach the Varoma and steam for 10 min./Varoma/speed 1.

Chop onion

Peel, quarter and place 1 onion in the mixing bowl. Chop for 3 sec./speed 5.

Prepare pistachios and garlic

Put 2 tbsp (30 g) pistachio kernels and 1 clove of garlic in the mixing bowl and chop for 5 sec./speed 7.

Chop Parmesan

Put 40 g Parmesan or vegetarian hard cheese (piece) in the mixing bowl and chop for 10 sec./speed 10.

Prepare pesto

Thermomix® Setting

Put a good 1⁄3 of the cooked broccoli, the chopped pistachios, the garlic, the chopped Parmesan, 2 tbsp crème fraîche, 1 tsp medium-hot mustard and 100 ml olive oil in the mixing bowl and purée for 20 sec./speed 8. Season with salt and pepper.

Cook pasta

12 min/212°F/Speed 1 100

Put 400 g orecchiette pasta (ear-shaped pasta) in the mixing bowl. Add 1 liter of water and 1 tsp of salt. Cook for 12 min./100°C/speed 1.

Fry sausage and broccoli

Heat 1 tbsp olive oil in a pan. Squeeze 2 salsicce (à ca. 100 g; coarse Italian sausage) out of their skins directly into the pan. Chop a little with a spatula and fry for about 10 minutes, turning occasionally. After about 5 minutes, add the chopped onion and the rest of the cooked broccoli and fry.

Finish

Drain the cooked pasta and put it back into the mixing bowl. Add the pesto and the fried sausage with the broccoli. Mix everything for 10 sec./reverse speed speed 2.

Arrange

Arrange the orecchiette with broccoli-pistachio pesto on plates. Grate the remaining Parmesan over it and serve.
