Description

This oriental couscous salad is an absolute highlight for any barbecue party or as a light meal in between. The combination of couscous, fresh mint, sweet dates and crunchy vegetables makes it a taste experience. I love how the fruity sweetness of the dates and honey harmonizes with the warm, earthy spices. The salad is quick to prepare and can be wonderfully prepared in advance. A dash of olive oil rounds everything off and ensures a pleasant consistency. Try it, you will be thrilled!

Ingredients (15 ingredients)

  • 250 g Couscous
  • 0.13 Liter Orange juice
  • 1 piece Onion
  • 1 piece small Zucchini
  • 1 piece Bell pepper red
  • 10 piece Soft figs or soft dates
  • 2 tbsp Honey
  • 5 Blätter Peppermint fresh
  • to taste Salt
  • to taste Pepper
  • to taste Turmeric
  • to taste Cumin
  • to taste Curry
  • to taste Garam Masala
  • 1 tbsp Olive oil

Preparation (6 steps)

Prepare couscous

Thermomix® Setting
3 min/212°F/Speed 1 100

Put 250 g couscous and 0.13 liters orange juice into the mixing bowl. Fill the amount of liquid with water up to the total amount indicated on the package. Cook for 3 min./100°C/level 1. Then transfer to a large bowl and loosen with a fork.

Chop onion

Thermomix® Setting
3 sec/Speed 5

Put 1 onion in the mixing bowl and chop for 3 sec./level 5. Push down with the spatula.

Sauté and glaze onion

Thermomix® Setting
3 min/248°F/Speed 1 120

Put 1 tbsp olive oil and the chopped onion in the mixing bowl and sauté for 3 min./120°C/level 1. Then add 2 tbsp honey and glaze for 1 min./100°C/level 1.

Prepare zucchini

Wash 1 small zucchini, cut into small cubes and lightly fry in a separate pan with some olive oil.

Chop mint

Thermomix® Setting
3 sec/Speed 8

Wash 5 leaves of peppermint, pat dry, put in the mixing bowl and chop for 3 sec./level 8.

Mix salad

Mix the couscous, the fried zucchini, the glazed onions, the diced bell pepper, the chopped soft fruits and the chopped peppermint well in a large bowl. Season with salt, pepper, turmeric, cumin, curry and Garam Masala to taste. Then add about 6 tbsp olive oil and mix everything well.
