Original Sachertorte recipe

Ingredients (10 ingredients)

  • 200 g Bittersweet chocolate
  • 60 g Butter
  • 8 Stück Eggs
  • 140 g Powdered sugar
  • 1 Prise Salt
  • 140 g Flour
  • 60 g Ground almonds
  • 200 g Apricot jam
  • 200 g Bittersweet chocolate
  • 20 g Cocoa butter

Preparation (10 steps)

Melt chocolate

Break 200 g bittersweet chocolate into pieces and place in the mixing bowl. Chop for 10 sec./speed 8. Then add 60 g butter and melt for 3 min./50°C/speed 2.

Stir eggs, sugar and salt

Place 8 eggs and 140 g powdered sugar and 1 pinch of salt in the mixing bowl and stir for 3 min./speed 4. Insert the butterfly.

Stir in chocolate mixture

Add the melted chocolate-butter mixture from step 1 to the egg-sugar mixture in the mixing bowl and stir in for 30 sec./speed 3. Remove butterfly.

Mix and fold in flour and almonds

Thermomix® Setting

Add 140 g flour and 60 g ground almonds to the mixing bowl and fold in for 30 sec./speed 3.

Bake dough

Pour the dough into a greased and floured springform pan (20 cm diameter) and bake in a preheated oven at 170°C top/bottom heat for approx. 50 minutes. Do the chopstick test.

Cool and cut cake

After baking, remove the cake from the oven and let it cool completely. Then cut horizontally into two layers.

Heat jam

Put 200 g apricot jam in the mixing bowl and heat for 3 min./60°C/speed 2.

Fill and spread cake

Spread the bottom cake layer with half of the heated apricot jam. Place the second layer on top and spread the rest of the jam all around the cake.

Prepare glaze

3 min/122°F/Speed 2 122°F

Break 200 g bittersweet chocolate and 20 g cocoa butter into pieces and place in the mixing bowl. Melt for 3 min./50°C/speed 2.

Glaze cake

Pour the liquid glaze over the cake and spread evenly. Let dry.
