Description

This autumnal focaccia with pumpkin is a poem! I especially like to make it when the pumpkins in the garden are ripe. The slightly sweet taste of the pumpkin harmonizes wonderfully with the salty dough and the spicy rosemary. The preparation is very simple and succeeds with the Thermomix® in no time. Perfect as a side dish for grilling, as a snack in between or simply to enjoy as is. The grated cheese gives the focaccia a particularly delicious crust. An absolute must for all pumpkin lovers!

Ingredients (8 ingredients)

  • 350 g cleaned pumpkin
  • 210 g flour
  • 350 ml water
  • 30 g grated cheese
  • breadcrumbs
  • rosemary
  • olive oil
  • fine salt

Preparation (6 steps)

Prepare pumpkin

Thermomix® Setting
5 sec/Speed 5

Cleaned pumpkin in pieces in the bowl and chop for 5 Sec./Speed 5. Transfer to a bowl and set aside.

Prepare dough

Thermomix® Setting
2 min/Speed Kneading

Flour, water, olive oil and fine salt in the bowl and knead for 2 Min./Speed Knead.

Add pumpkin and cheese

Thermomix® Setting
20 sec/Linkslauf/Speed 2 Reverse

Add grated pumpkin and grated cheese and mix for 20 Sec./Reverse/Speed 2 with the spatula.

Prepare the baking sheet

Line a baking sheet with baking paper, grease with olive oil and sprinkle with breadcrumbs.

Pour and season

Pour the mixture into the pan, flatten well, sprinkle with more breadcrumbs, add a drizzle of olive oil and sprigs of rosemary.

Bake in the oven

Bake in a preheated ventilated oven at 200°C for 40 minutes or until golden brown.
