Description

Fried yeast dough diamonds are a sweet yeast pastry that is easy to prepare with the Thermomix®. The main ingredients are milk, yeast, flour, eggs and butter. The recipe is suitable as festive finger food, dessert or for breakfast. The preparation time is 105 minutes for 6 servings. Ideal for the winter and Christmas coffee table.

Ingredients (9 ingredients)

  • 200 ml Milk
  • 80 g Sugar
  • 0.5 Würfel Yeast (fresh)
  • 500 g Wheat flour Type 405
  • 1 Prise Salt
  • 2 Stück Eggs
  • 75 g Butter (soft)
  • 1 l Oil for frying
  • 1 nach Bedarf Powdered sugar

Preparation (7 steps)

Heat milk and dissolve yeast

Thermomix® Setting
2 min/99°F/Speed 2, dann 20 sec/Speed 3 37

Put 200 ml milk in the mixing bowl and heat for 2 min./37°C/speed 2. Add 80 g sugar and 0.5 cube of fresh yeast and stir for 20 sec./speed 3 until the yeast has dissolved. Then let it rest in the mixing bowl for 5 minutes.

Prepare yeast dough

Thermomix® Setting
2 min/Kneading speed, ggf. 30 sec/Kneading speed

Put 500 g wheat flour type 405, a pinch of salt, 2 eggs and 75 g soft butter in the mixing bowl. Knead the dough for 2 min./kneading stage. If necessary, add some flour or milk and knead again for 30 sec./kneading stage.

Let the dough rise

Remove the dough from the mixing bowl, form it into a ball with your hands and let it rise covered in a warm place for 30 to 45 minutes until the volume has increased significantly.

Roll out and shape dough

Roll out the dough on a floured work surface to a rectangular shape 0.5 - 1 cm thick, cut into diamonds with 3 cm edge length and let rise again for 10 minutes.

Heat oil

Heat 1 l oil in a pot or deep fryer to approx. 170 °C.

Fry doughnuts

Fry the diamonds in portions in the hot oil until golden brown, remove with a slotted spoon and drain on kitchen paper.

Serve

Serve the fried yeast dough diamonds sprinkled with powdered sugar while still warm.
