Description

This recipe for cinnamon snails with gingerbread spice is a delicious yeast pastry, ideal for the winter season and festive occasions such as Christmas. Preparation takes about 180 minutes and yields 12 servings. The snails are a perfect dessert or breakfast for the whole family. With the Thermomix® the preparation is quick and easy.

  • 500 g Flour
  • 75 g Sugar
  • 1 Päckchen Vanilla sugar
  • 1 Prise Salt
  • 75 g soft Butter
  • 100 ml Milk
  • 1 Würfel Yeast
  • 125 g soft Butter
  • 100 g Sugar
  • 2 TL Gingerbread spice
  • 150 g Icing sugar
  • 2 EL Lemon juice
  • Sugar sprinkles (as desired)

Prepare yeast

Add 100 ml milk and 1 cube yeast to the mixing bowl and heat for 2 min./37°C/speed 2.

Prepare dough

Thermomix® Setting
3 min/Kneading speed

Add 500 g flour, 75 g sugar, 1 packet vanilla sugar, 1 pinch salt, 75 g soft butter and the prepared yeast-milk mixture to the mixing bowl and knead for 3 min./kneading setting to form a dough.

Let dough rise

Transfer the dough to a bowl, cover and let rise in a warm place for about 1 hour, until the volume has doubled. Rinse mixing bowl.

Prepare filling

Add 125 g soft butter, 100 g sugar and 2 tsp gingerbread spice to the mixing bowl and mix for 20 sec./speed 3.

Shape cinnamon snails

Roll out the dough on a floured work surface to form a rectangle (approx. 30 x 40 cm). Spread the filling evenly on top. Roll up the dough from the long side and cut into slices about 3 cm thick.

Bake cinnamon snails

Place the cinnamon snails on a baking tray lined with baking paper and bake in a preheated oven at 180°C top/bottom heat for about 20-25 minutes.

Prepare glaze

Add 150 g icing sugar and 2-3 tbsp lemon juice to the mixing bowl and mix for 15 sec./speed 3. Add more lemon juice if necessary until the desired consistency is reached.

Decorate cinnamon snails

Brush the cooled cinnamon snails with the glaze and decorate with sugar sprinkles as desired.
