Description

The mushroom seitan pan with spätzle is a hearty and quick main course from the Thermomix®. With seitan, mixed mushrooms, shallots, garlic and oat cream, a delicious meal is created in just 30 minutes. The vegan recipe is ideal for student cuisine and yields 4 servings. Perfect for cold days and anyone looking for an uncomplicated, vegetarian alternative.

  • 400 g Seitan
  • 500 g mixed Mushrooms
  • 2 Shallots
  • 1 Zehe Garlic
  • 1 EL Oil
  • Salt
  • 1 TL Tomato paste
  • 400 ml Oat cream
  • 500 g Spätzle (without egg)
  • 1 TL Granulated broth
  • Nutmeg
  • Pepper
  • 0.5 Bd. Parsley
  • 3 Zweig(e) Thyme

Preparation of the ingredients

Cut seitan into strips. Clean the mushrooms and cut into slices or quarters. Peel and finely dice the shallots and garlic. Wash, shake dry and chop the parsley and thyme. Cook the spätzle according to the package instructions in a separate saucepan with salt water.

Chop shallots and garlic

Put the shallots and garlic in the mixing bowl and chop for 3 seconds/speed 5. Scrape down from the edge with the spatula.

Sauté shallots and garlic

Add 1 tablespoon of oil to the shallots and garlic in the mixing bowl and sauté for 3 minutes/120°C/speed 1.

Add mushrooms and seitan to the mixing bowl and season with salt. Steam for 5 minutes/Varoma/reverse rotation speed 1.

Add tomato paste and oat cream

Add 1 teaspoon of tomato paste and 400 ml of oat cream to the mixing bowl and simmer for 4 minutes/90°C/reverse rotation speed 1.

Thicken the sauce

Add 1-2 ladles of spätzle cooking water to the mixing bowl and bring to the boil for 2 minutes/100°C/reverse rotation speed 1 until the sauce thickens slightly.

Add 1 teaspoon of granulated broth, salt, pepper and nutmeg to the mixing bowl and mix for 10 seconds/speed 3.

Divide the spätzle with sliced meat onto plates and sprinkle with chopped parsley and thyme.
