Description

This rye-spelt bread is a hearty and aromatic bread that is prepared with the Thermomix®. The combination of rye and spelt flour gives the bread a rustic taste. Preparation takes about 2 hours, including the resting time for the dough. Ideal for a hearty breakfast or as a side dish to soups and salads.

Ingredients (9 ingredients)

  • 2 tsp Coriander seeds
  • 2 tsp Caraway, whole
  • 2 tsp Salt
  • 2 tsp Fennel seeds
  • 500 ml lukewarm Water
  • 200 g Rye flour
  • 500 g Spelt flour
  • 1 Pkg Dry yeast
  • 1 tsp Sugar

Preparation (7 steps)

Chop spices

2 tsp coriander seeds, 2 tsp caraway, whole, 2 tsp salt and 2 tsp fennel seeds into the mixing bowl and chop 10 sec./level 10.

Transfer spices

Pour the chopped spices from the mixing bowl into a separate bowl and set aside.

Prepare yeast

Add 500 ml lukewarm water, 1 tsp sugar and 1 package dry yeast to the mixing bowl and stir 2 min./37°C/level 2.

Let yeast rest

Add 100g spelt flour and stir 15 sec./level 3. Let the dough rest in the mixing bowl for 15 minutes.

Prepare dough

Thermomix® Setting
3 min/Kneading speed

Add the remaining spelt flour (400g), rye flour (200g), the prepared spices and 25ml oil to the mixing bowl and knead 3 min./kneading setting.

Let dough rise

Remove the dough from the mixing bowl and let it rise in a bowl in a warm place for about 1 hour.

Shape and bake dough

After the resting time, knead the dough again and shape into a loaf of bread. Preheat the oven to 240°C top/bottom heat and bake the bread for 40-50 minutes.
