Description

This apple walnut bread is a poem! I especially like to make it in autumn when the apples are nice and juicy. The combination of tart apples, crunchy walnuts and a hint of cinnamon is simply unbeatable. The bread is super juicy and stays fresh for a few days. Perfect for breakfast, with coffee or simply as a small snack in between. It can also be prepared wonderfully, as the apple mixture has to steep overnight. An absolute must for all bread lovers!

Ingredients (11 ingredients)

  • 350 g tart apples
  • 75 g Raisins
  • 50 ml Lemon juice
  • 40 g Brown sugar
  • 75 g Walnut kernels
  • 200 g Wheat flour Type 405
  • 3 tsp Baking powder
  • 10 g Cocoa
  • 1 tsp Cinnamon powder
  • 1 pinch Salt
  • 40 ml Water

Preparation (5 steps)

Prepare apples

Wash 350 g of tart apples (e.g. Boskoop), quarter, core and cut the quarters into thin slices. Mix 75 g raisins, 50 ml lemon juice, 40 ml water and 40 g brown sugar in a bowl. Cover and leave to steep overnight or for approx. 8 hours.

Chop walnuts

Put 75 g walnut kernels into the mixing bowl and chop for 5 sec/speed 5. Transfer.

Prepare dough

10 sec/Speed 4

Put 200 g wheat flour type 405, 3 tsp baking powder, 10 g cocoa, 1 tsp cinnamon powder and 1 pinch of salt into the mixing bowl and mix for 10 sec/speed 4.

Add apple mixture and nuts

Thermomix® Setting
20 sec/Linkslauf/Speed 3 Reverse

Add the prepared apple mixture and the chopped walnuts and stir for 20 sec/reverse/speed 3. Use the spatula to push down from the edge and, if necessary, stir for a further 5 sec/reverse/speed 3.

Baking

Pour the dough into a loaf tin (20 cm length) lined with baking paper and smooth it out with a tablespoon. Bake in a preheated oven at 180 °C top/bottom heat for 20 minutes, then reduce the temperature to 160 °C and bake the apple bread for a further 25 minutes. Remove and brush with water. Leave the bread to cool in the tin for 10 minutes, then remove from the tin and leave to cool on a wire rack.
