Description

The Folding Bread Tomato-Mozzarella from the Thermomix® is a savory bread with Mediterranean flavors. Onion, garlic, herbs, butter and tomato paste form the basis for this Italian-inspired snack. Preparation takes about 90 minutes, of which 45 minutes are active work, and yields about 20 servings. Ideal as finger food for parties, as an appetizer or as a side dish for grilling. This vegetarian bread is a delicious eye-catcher on every buffet.

Ingredients (17 ingredients)

  • 1 Stück small Onion, halved
  • 2 Stück Garlic cloves
  • 1 EL dried Italian herbs
  • 90 g Butter, in pieces, plus some for greasing
  • 1 TL medium-hot Mustard
  • 30 g Tomato paste
  • 1.5 TL sweet paprika powder
  • 30 g Olive oil
  • 3 Prisen Pepper
  • Salt
  • 320 g Water
  • 40 g fresh Yeast
  • 1 TL Sugar
  • 600 g Wheat flour Type 405 plus some for processing
  • 30 g Tomato paste
  • 50 g Olive oil
  • 125 g grated Mozzarella

Preparation (6 steps)

Prepare butter

Put onion, garlic and herbs in the mixing bowl and chop for 5 sec./speed 5. Scrape down with the spatula. Add butter, mustard, tomato paste, paprika powder, olive oil, pepper and 1.5 tsp salt and mix everything for 20 sec./speed 3. Transfer and clean the mixing bowl.

Prepare butter (Part 2)

Scrape down with the spatula. Add butter, mustard, tomato paste, paprika powder, olive oil, pepper and 1.5 tsp salt and mix everything for 20 sec./speed 3. Transfer and clean the mixing bowl.

Prepare dough

Grease the springform pan. For the folding bread, add water, yeast and sugar to the mixing bowl and heat for 2 min./37°C/speed 2.

Knead dough

3 min/Kneading speed

Add flour, 1.5 tsp salt, tomato paste and olive oil and knead for 3 min./kneading stage. Place dough on a lightly floured work surface, knead briefly by hand, roll out to baking sheet size.

Shape folding bread

Spread the dough with butter, sprinkle with half of the mozzarella and cut into strips about 12 cm wide. Fold the dough strips like an accordion and place vertically in the springform pan. Cover the mold and let the folding bread rise in a warm place for 30 minutes.

Bake folding bread

Preheat oven to 200 °C top/bottom heat. Spread the remaining mozzarella on the folding bread and bake for 25-30 minutes. Carefully remove from the mold and serve slightly cooled.
