Description

These pambazos with poblano mole are an explosion of Mexican flavor. The combination of the mole, with its complexity of chiles and spices, along with the shredded chicken and creamy avocado, make this dish an unforgettable experience. I prepare them for family parties and they are always a success. The mole, although it takes time, is relatively easy to make with the Thermomix®. Ingredients (26 ingredients)

  • 5 piece wide chiles
  • 4 piece pasilla chiles
  • 4 piece guajillo chiles
  • 1 piece small onion
  • 2 piece tomatoes
  • 2 clove garlic
  • 50 gramos almond
  • 80 gramos raisins
  • 80 gramos natural peanut
  • 50 gramos green pepita
  • 2 cucharadas soperas sesame seed
  • 1 trozo tortilla
  • 5 piece María cookies
  • 1 piece plantain in slices
  • 0.5 rama cinnamon
  • 2 piece cloves
  • 1 cucharadita anise
  • 125 gramos table chocolate
  • 1 litro chicken broth or water
  • vegetable oil
  • lard
  • salt
  • pepper
  • 300 gramos shredded chicken
  • 10 piece breads for pambazo
  • avocado in slices

Preparation (8 steps)

Prepare chiles

The wide, pasilla and guajillo chiles are cleaned and deveined. Then, they are toasted in a hot pan without burning. Reserve.

Cook chiles and tomatoes

5 min/212°F/Speed 1 100

In a pot, put the toasted chiles and the tomatoes with enough water. Cook for 5 Min./100°C/Level 1 to soften them. Reserve.

Chop onion and garlic

Thermomix® Setting
3 Seg./Speed 5, 3 Seg./Speed 7

The small onion is cut into pieces and placed in the Thermomix glass. Chop 3 Sec./Level 5. Add the garlic to the glass and chop 3 Sec./Level 7.

Sauté ingredients

Thermomix® Setting
10 min/248°F/Speed 1 120

Add 2 tablespoons of vegetable oil or lard to the glass. Add the chopped onion, garlic, almonds, peanuts, pumpkin seeds, raisins, sliced plantain, sesame seeds, cookies, tortilla pieces, half a cinnamon stick and 2 cloves. Add half a cup of water. Cook everything 10 Min./120°C/Level 1.

Mix mole

Thermomix® Setting
1 min/Speed 10

Add the cooked chiles, the cooked tomatoes, 1 teaspoon of anise and 3 cups of chicken broth or water to the glass. Mix everything 1 Min./Level 10 until obtaining a thick sauce.

Cook mole

Thermomix® Setting
15 min/212°F/Speed 2 100

Pour the sauce into the clean glass. Add the table chocolate. Cook 15 Min./100°C/Level 2. If the sauce is too thick, add one more cup of chicken broth or water. Season with salt and pepper to taste.

Add chicken

Thermomix® Setting
20 Seg./Linkslauf/Speed 2 Reverse

Add the shredded chicken to the glass with the mole. Mix 20 Sec./Reverse rotation/Level 2 to integrate the chicken with the sauce.

Fill pambazos

Open the pambazo breads in half and fill with the mole with chicken. Add slices of avocado to taste.
