Description

This Chuta Bread, a traditional Peruvian recipe, is a true pleasure for the palate. Ingredients (8 ingredients)

  • 500 gramos flour
  • 200 mililitros chamomile water
  • 120 gramos brown sugar
  • 20 gramos dry yeast
  • 40 gramos butter
  • 10 gramos salt
  • 1 puñado whole wheat flour or wheat bran
  • 1 piece anise or raisins (optional)

Preparation (8 steps)

Prepare chamomile infusion

Thermomix® Setting

Heat 200 ml of water in the Thermomix® for 5 Min./100°C/Stufe 1. Add dried chamomile flowers or two tea bags. Let stand until lukewarm. Remove the flowers or bags.

Mix dry ingredients

In the Thermomix® bowl, place 500 g of flour, 120 g of brown sugar, 10 g of salt and 20 g of dry yeast. Mix for 10 Sek./Stufe 4.

Add infusion and knead

Thermomix® Setting
2 min/Kneading speed

Add the warm chamomile infusion to the Thermomix® bowl. Knead for 2 Min./Knetstufe.

Incorporate butter

Thermomix® Setting
3 min/Kneading speed

Add 40 g of butter cut into cubes to the Thermomix® bowl. Knead for 3 Min./Knetstufe.

First rise

Remove the dough from the Thermomix®, shape it into a ball and place it in a previously greased bowl. Cover with a damp cloth or plastic wrap and let it rest in a warm place for 60 minutes or until it doubles in volume.

Shape the bread

Flour a table with whole wheat flour or wheat bran. Place the dough on top, press lightly with your hands, turn it over so that the other side is also covered with flour, and begin to carefully stretch it with a rolling pin until it is approximately one finger thick. Place the dough on a previously greased baking sheet.

Second rise

Prick the surface of the dough with a fork or skewer. Cover with a damp cloth or film. Let stand again in a warm place until it doubles in volume, approximately 45 minutes.

Bake

Preheat the oven to 180°C. Bake the bread for 25 minutes or until golden brown.
