Description

This recipe for soft gingerbread is ideal for the Christmas season. With whole wheat spelt flour, ground nuts and gingerbread spice, an aromatic pastry is created. Preparation in the Thermomix® simplifies the process. The gingerbread is ready in about 45 minutes and yields about 35 pieces. Perfect as finger food or dessert.

Ingredients (17 ingredients)

  • 4 Stück Eggs
  • 240 g Cane sugar
  • 1 Päckchen Vanilla sugar
  • 3 EL Honey
  • 300 g Whole wheat spelt flour
  • 1 Päckchen Baking powder
  • 150 g Ground nuts
  • 3 TL Gingerbread spice
  • 1 Prise Salt
  • 1 TL Baking cocoa
  • 0.5 Stück Orange zest
  • 250 ml Milk
  • 150 g Butter
  • 1 Stück Chocolate coating
  • Almonds
  • Powdered sugar
  • Icing

Preparation (6 steps)

Preheat oven

Preheat the oven to 180 °C top/bottom heat.

Beat eggs, sugar and vanilla sugar

Put eggs, cane sugar and vanilla sugar in the mixing bowl and beat until fluffy. Use spatula to push everything down from the edge.

Add honey, milk and butter

Add honey, milk and butter (room temperature) to the mixing bowl and stir.

Add dry ingredients

Add whole wheat spelt flour (or wheat flour), baking powder, ground nuts, gingerbread spice, salt, cocoa and optional orange zest to the mixing bowl.

Bake dough

Spread the finished dough evenly into baking mats or portion it with two spoons onto a baking sheet. Bake gingerbread for about 10–15 minutes — depending on size and thickness. Then let cool completely.

Decorate

If desired, coat with melted chocolate and decorate with almonds, powdered sugar or icing.
