Description

This spinach and blue cheese flatbread is a delightful and quick meal, perfect for a light lunch or dinner. The combination of earthy spinach, pungent blue cheese, and crunchy walnuts creates a symphony of flavors that's hard to resist. I love how easy it is to whip up, especially when I'm short on time.   • 1 tsp rapeseed oil
  • 2 piece large flat mushrooms
  • 2 clove garlic cloves
  • 160 g spinach
  • 1 piece red onion
  • 40 g vegetarian blue cheese
  • 4 piece walnut halves
  • 125 g wholewheat spelt flour
  • 0.5 tsp baking powder
  • 3 tbsp bio yogurt

Prepare Mushrooms and Garlic

Add the rapeseed oil to the mixing bowl. Add the large flat mushrooms and garlic cloves. Cook for 5 Min./120°C/Stufe 1 until softened, stirring frequently.

Add Spinach and Onion

Thermomix® Setting
3 min/212°F/Speed 1 100

Add the spinach, a handful at a time, and the red onion to the mixing bowl. Cook for 3 Min./100°C/Stufe 1 until the spinach is just wilted but not soggy, stirring frequently.

Prepare the Dough

Thermomix® Setting
2 min/Kneading speed

Tip the wholewheat spelt flour and baking powder into the mixing bowl. Add the bio yogurt. Mix for 2 Min./Knetstufe to make a ball of soft dough.

Shape the Dough

Dust a sheet of baking parchment with flour, put the dough on top and press with floured hands to make a flat 20cm round.

Add Toppings and Bake

Top with the spinach mixture, scatter over the vegetarian blue cheese and walnut halves, then bake on the hot baking sheet for 12 mins or until the dough is cooked through and golden. Preheat oven to 200C/180C fan/gas 6 and place a baking sheet inside to get hot.
