Description

These oat flake pancakes are a delicious and healthy start to the day! I love serving them with fresh berries and a dollop of Greek yogurt. The oat flour makes the pancakes particularly juicy and nutritious. They are quick to prepare and taste great to the whole family. Especially in summer, when there is a large selection of fresh berries, they are an absolute highlight on our breakfast table. If you like, you can add some cinnamon or vanilla to the dough. A great recipe for a relaxed weekend!

Ingredients (12 ingredients)

  • 2 piece Eggs (size M)
  • 125 g Oat flake flour
  • 100 g Whole wheat flour
  • 80 g Brown sugar
  • 1 Pck. Cream of tartar baking powder
  • 1 Prise(n) Salt
  • 170 ml Milk (3.8%)
  • 30 ml Sunflower oil
  • 400 g Mixed berries (e.g. raspberries, blueberries)
  • 8 tbsp Greek yogurt (10% fat)
  • 4 tbsp Honey or maple syrup
  • 4 tbsp Shaved almonds

Preparation (7 steps)

Separate eggs and mix dry ingredients

Separate eggs. Set aside egg yolks. Add oat flake flour, whole wheat flour, brown sugar, baking powder and salt to the mixing bowl and mix for 10 sec/speed 4. Transfer.

Prepare egg yolk mixture

Thermomix® Setting
15 sec/Speed 3

Add egg yolks, milk and sunflower oil to the mixing bowl and stir for 15 sec/speed 3.

Mix dough

Thermomix® Setting
20 sec/Speed 4

Add the flour mixture from step 1 to the egg yolk mixture in the mixing bowl and stir for 20 sec/speed 4. Transfer.

Whisk egg whites until stiff

Thermomix® Setting
3 min/Speed 3.5

Clean the mixing bowl and insert the butterfly. Add egg whites to the mixing bowl and whisk until stiff for 3 min/speed 3.5.

Fold in egg whites

Carefully fold the beaten egg whites into the dough. The dough should remain airy.

Bake pancakes

Heat a large pan. Add a ladle of batter each time and bake the pancakes until golden brown on both sides.

Arrange pancakes

Arrange pancakes with berries and yogurt on plates. Drizzle with honey or maple syrup and sprinkle with almonds to taste.
