Description

Dieses griechische Osterbrot, auch Tsoureki genannt, ist ein absolutes Highlight zu Ostern! Ich backe es jedes Jahr und es duftet einfach herrlich im ganzen Haus. Die Kombination aus Mandeln, getrockneten Aprikosen, Orange und Zitrone macht es so besonders. Das Mahlepi-Gewürz verleiht dem Teig eine einzigartige Note. Die Zubereitung ist zwar etwas aufwendiger, aber das Ergebnis ist es allemal wert. Perfekt für ein festliches Osterfrühstück oder als süße Leckerei am Nachmittag. Ein Stück Griechenland für zu Hause!

  • 2.25 cups milk
  • 1 cups sugar
  • 0.25 cups butter
  • 1 tsp yeast
  • 8 cups unbleached bread flour
  • 4 piece eggs
  • 1 piece egg white
  • 1 cups chopped blanched almonds
  • 1 pound chopped dried apricots
  • 1 piece orange, zested and juiced
  • 1 piece lemon, zested
  • 1 tbsp mahlepi
  • 1 piece egg yolk
  • 0.25 cups milk
  • 0.5 cups slivered almonds

2 ¼ cups milk, 1 cup sugar, and ¼ cup butter in the Thermomix bowl. Heat for 5 Min./44°C/Stufe 2. Add 1 teaspoon yeast and stir for 10 Sek./Stufe 3. Let the mixture sit in the Thermomix bowl for 10 minutes to activate the yeast.

Add 8 cups flour, 4 eggs, 1 egg white, 1 cup chopped almonds, 1 pound chopped dried apricots, zest and juice of 1 orange, zest of 1 lemon, and 1 tablespoon mahlepi to the Thermomix bowl. Knead for 3 Min./Knetstufe. If the dough is too sticky, add more flour gradually until it is only slightly sticky. Remove the dough from the Thermomix bowl and place it in a large bowl. Cover and let it rise in a warm place for about 1 hour, or until doubled in size.

Eigelb-Glasur vorbereiten

In a small bowl, whisk together 1 egg yolk and ¼ cup milk. Cover and refrigerate until ready to use.

Preheat the oven to 175°C (350°F).

Brot formen und bestreichen

Punch down the risen dough to release the air. Divide the dough into 2 equal parts. Divide each half into 3 equal balls. Roll each ball into a rope about 45 cm (18 inches) long. Braid 3 ropes together to make a loaf and tuck the ends underneath. Place the loaf on a baking sheet lined with parchment paper. Repeat with the remaining 3 ropes to form a second loaf. Brush the egg yolk mixture on top of each loaf and sprinkle with ½ cup slivered almonds. Brush again with the egg yolk mixture.

Brot backen

Bake in the preheated oven for about 40 minutes, or until the loaves are golden brown and sound hollow when tapped on the bottom.
