Description

This sweet bread with dried fruits is a traditional recipe that I always prepare at Christmas. The dough, enriched with malt extract and orange blossom water, has a delicious aroma that floods the whole house. The combination of walnuts, almonds, hazelnuts and raisins gives it an incredible texture and flavour. It is perfect to share with the family during the holidays. The preparation is simple thanks to the Thermomix®, which facilitates mixing and kneading. Go ahead and try it and enjoy a spectacular homemade sweet bread! You can decorate it with icing sugar for a more festive touch. The key is in the rising, so patience and affection.

Ingredients (13 ingredients)

  • 250 gramos flour
  • 12 gramos fresh yeast
  • 1 piece egg
  • 50 gramos sugar
  • 50 centímetros cúbicos neutral oil
  • 100 centímetros cúbicos lukewarm milk
  • 1 cucharada sopera malt extract
  • 1 cucharada postre vanilla essence
  • 0.5 cucharadita orange blossom water
  • 200 gramos dried and dehydrated fruits
  • 1 piece beaten egg
  • 1 cucharada sopera flour
  • 1 cucharada sopera icing sugar

Mix liquid ingredients

In the Thermomix glass, add 100 ml of lukewarm milk, 1 egg, 50 ml of neutral oil, 12 g of fresh yeast, 50 g of sugar, 1 dessert spoon of vanilla essence, ½ teaspoon of orange blossom water and 1 tablespoon of malt extract. Mix for 2 Min./Stufe 4 to integrate all the ingredients.

Add the flour

Add 250 g of flour to the Thermomix glass. Mix for 3 Min./Knetstufe to form a homogeneous dough.

First rising

Remove the dough from the Thermomix glass, form a ball and place it in a lightly greased container. Cover with transparent film and let it rise in a warm place for approximately 1 hour, or until it doubles in size.

Prepare the dried fruits

In a separate container, mix 200 g of dried and dehydrated fruits (walnuts, almonds, hazelnuts, cashews, raisins) with 1 tablespoon of flour.

Incorporate the dried fruits into the dough

Add the dried fruits to the risen dough and mix gently with a spatula until they are well distributed.

Second rising

Place the dough in a previously greased sweet bread mould. Distribute the dough well throughout the mould and let it rise again for 40 minutes.

Preheat the oven

Preheat the oven to 180°C.

Bake the sweet bread

Paint the surface of the sweet bread with 1 beaten egg and bake in the preheated oven at 180°C for 40 minutes. It is recommended to place a container with boiling water in the oven during the first 20 minutes of cooking to maintain humidity.

Cool and decorate

Let the sweet bread cool on a wire rack and then sprinkle with 1 tablespoon of icing sugar to decorate.
