Description

This rustic rosemary bread is incredibly easy to make and requires no kneading! The wholemeal flour gives it a lovely nutty flavor, while the rosemary adds a fragrant, savory note. I've been making this bread for years, and it's always a hit. It's perfect served warm with butter or alongside a hearty soup. The slight tang from the 'buttermilk' made with milk and lemon juice really elevates the flavor. It's ready in about an hour, making it a great option for a quick and satisfying bake. Enjoy!

Ingredients (7 ingredients)

  • 500 g plain wholemeal flour
  • 2 tsp sea salt
  • 1 tsp bicarbonate of soda
  • 1 tbsp finely chopped rosemary
  • 400 ml whole milk
  • 1 piece lemon
  • 2 tsp honey

Combine dry ingredients

Add 500g plain wholemeal flour, 2 tsp sea salt, and 1 tsp bicarbonate of soda to the mixing bowl. Mix for 10 Sec./Stufe 3 to combine. If using rosemary, add 1 tbsp finely chopped rosemary to the bowl.

Prepare buttermilk mixture

In a jug, combine 400ml whole milk and the juice of 1 lemon. Let it sit for 1 minute to curdle into buttermilk. Add 2 tsp honey to the buttermilk mixture and stir to dissolve.

Combine wet and dry ingredients

Pour the buttermilk mixture into the mixing bowl with the dry ingredients. Mix with a spatula until a sticky dough forms. This should take about 20 seconds.

Shape the dough

Tip the dough onto a floured work surface and gently shape it into a ball.

Prepare for baking

Place the dough ball on a floured baking tray. Using a sharp knife, make a deep cross on top of the dough.

Bake the bread

Preheat oven to 200°C/180°C fan/gas 6. Bake the bread in the preheated oven for 40 minutes.

Cool and serve

Cool the baked bread on a wire rack until warm. Slice and serve.
