Description

These Turkish flatbreads are an absolute delight! I often bake them when I feel like something savory. The dough is super easy to prepare and the flatbreads are wonderfully fluffy. I especially like them sprinkled with sesame seeds or black cumin. They go perfectly with dips, salads or just on their own. Preparation in the Thermomix® makes it particularly easy to knead the dough perfectly. A great recipe for a quick and tasty bread!

Ingredients (12 ingredients)

  • 500 g Wheat flour Type 550
  • 10 g Salt
  • 10 g Olive oil
  • 7.5 g Sugar
  • 0.5 cube Fresh yeast
  • 360 ml Water
  • Oil for the bowl
  • Flour for the work surface
  • 1 piece Egg
  • Water
  • Sesame
  • Black cumin

Preparation (5 steps)

Prepare dough

Thermomix® Setting
8 min/Kneading speed

Add 500 g wheat flour type 550, 10 g salt, 10 g olive oil, 7.5 g sugar, 0.5 cube fresh yeast or 1 pack dry yeast and 360 ml water to the mixing bowl and knead for 8 min./kneading stage.

Let the dough rise

Place the dough in a lightly oiled bowl and let it rise, covered, in a warm place for about 90 minutes.

Portion and shape dough

Place the dough on a floured work surface and divide into two portions (approx. 400 g per portion). Carefully shape the dough pieces into an oval shape without squeezing out too much gas. Cover with a cloth and let rest for 20 minutes.

Shape and top flatbreads

Shape each piece of dough into an oblong or oval shape and place on a baking sheet lined with baking paper. Brush the loaves with a water-egg mixture. Press down deeply with your fingertips (until almost small holes are created) and sprinkle with sesame seeds or black cumin as needed. Let rest for another 20 minutes.

Bake flatbreads

Preheat the oven to 250 °C top/bottom heat. Bake the flatbreads on the middle rack for approx. 7 - 9 minutes.
