Description

These chicken panini with curry sauce are an explosion of flavors! Perfect for a quick lunch or a delicious snack, they are prepared in a flash with the help of our trusted Thermomix®. The creamy and enveloping curry sauce goes perfectly with the tender chicken and fresh tomatoes. I love them for an outdoor picnic or a casual dinner with friends. The recipe is super versatile: you can vary the vegetables depending on the season and your tastes. Try adding cucumbers or peppers for an extra touch of freshness! A simple but tasty idea that will win everyone over.

Ingredients (11 ingredients)

  • 4 piece Baguette
  • 500 g Chicken breast
  • 2 piece Tomatoes
  • 1 cuore Lettuce heart
  • 1 pinch Salt
  • 1 pinch Black pepper
  • 2 tbsp Extra virgin olive oil (EVO)
  • 50 ml Seed oil
  • 1 piece Egg
  • 1 tsp Vinegar
  • 1 tsp Curry

Preparation (5 steps)

Prepare curry sauce

Thermomix® Setting
30 sec/Speed 5

Place the seed oil, egg, vinegar, salt and curry in the bowl. Blend for 30 Sec./speed 5 until a thick and creamy sauce like mayonnaise is obtained.

Cut tomatoes

Cut the tomatoes into thin slices and set aside.

Cook chicken

Heat a pan with a drizzle of extra virgin olive oil. Cook the chicken breast, previously cleaned of bones, fat and cartilage and cut in half, for about 6-7 minutes over medium heat, turning it occasionally for even cooking.

Slice chicken

Once cooked, remove the chicken breast from the pan and cut it into thin slices.

Assemble panini

Cut the baguettes in half. Add the lettuce hearts, tomato slices, a pinch of salt, chicken slices, salt, pepper and curry sauce. Close the sandwich and serve immediately.
