Description

Papas Rellenas are stuffed potato balls that can be served as a delicious finger food or appetizer. This recipe combines potatoes with a spicy lentil filling and is pan-fried until golden brown. Preparation takes about 45 minutes and yields two servings. Ideal for a cozy evening or as a snack in between.

Ingredients (13 ingredients)

  • 400 g cooked potatoes
  • 1 EL wheat flour
  • 1 EL cornstarch
  • nach Geschmack salt
  • 30 g green lentils
  • 1 Stück garlic clove
  • 0.25 TL paprika powder
  • 0.25 TL chili powder
  • 0.5 TL salt
  • 8 Blätter basil
  • 2 EL tomato paste
  • 4 EL Panko breadcrumbs
  • vegetable oil

Preparation (6 steps)

Prepare potatoes

Peel the 400g of cooked potatoes and mash finely with a fork until there are no more pieces. Place the mashed potatoes in the mixing bowl. Add 1 tbsp wheat flour and 1 tbsp cornstarch and season lightly with salt. Mix with the spatula.

Knead potato dough

Thermomix® Setting

Insert the Patix dough blade. Knead the dough with the Thermomix for 2 min./kneading stage until a sticky dough forms.

Cook lentils

Boil 30g of green lentils in a small saucepan with 200 ml of water. Add 1 chopped clove of garlic, 1/4 tsp paprika powder, 1/4 tsp chili powder and 1/2 tsp salt. Simmer over low heat for about 20-25 minutes until the lentils are soft.

Prepare lentil mixture

Finely chop 8 basil leaves and mix with 2 tbsp tomato paste and the cooked lentils.

Shape Papas Rellenas

Moisten your hands with water. Take a walnut-sized piece of potato dough from the mixing bowl and flatten it in your palm. Place a teaspoon of filling in the middle and close from the sides. Turn the potato ball in 4 tbsp Panko breadcrumbs and flatten slightly.

Fry Papas Rellenas

Heat some vegetable oil in a frying pan and fry the papas rellenas over medium heat for about 4-7 minutes until crispy and golden brown on all sides.
