Description

This pasta with Savoy cabbage and lemon sauce is a wonderfully light and refreshing dish, perfect for warm summer days! I especially like to make it when I need something quick, because it's on the table in less than an hour. The Savoy cabbage is cooked in a creamy sauce with lemon juice and zest, which gives the dish a great freshness. The roasted pine nuts and Parmesan provide the necessary bite and spice. An absolute favorite recipe that is always well received by us! Vegetarian and easy to prepare.

Ingredients (10 ingredients)

  • 300 ml Vegetable broth
  • 500 g Farfalle
  • 200 ml Cooking cream light
  • 100 g Parmesan coarsely grated
  • 1 Pck. Cress fresh
  • 50 g Pine nuts
  • 1 Zitronenabrieb Lemon zest
  • 1 Prise(n) Salt
  • 7 Blätter Savoy cabbage
  • 9 tbsp Lemon juice

Preparation (7 steps)

Prepare Savoy cabbage

Wash the Savoy cabbage leaves and cut into approx. 5 mm wide strips.

Sauté Savoy cabbage

Place the cut Savoy cabbage in the mixing bowl and sauté for 3 min./120°C/speed 1.

Prepare sauce

Thermomix® Setting
15 min/212°F/Speed 1 100

Add vegetable broth and cooking cream light and simmer for 15 min./100°C/speed 1 until the Savoy cabbage is cooked.

Refine sauce

Add lemon juice, lemon zest and salt and stir in for 1 min./90°C/speed 1.

Cook pasta

Thermomix® Setting
12 min/212°F/Speed 1 100

Add 500 ml of water to the mixing bowl and bring to a boil for 10 min./100°C/speed 1. Then add the Farfalle and a pinch of salt and cook al dente according to the package instructions (approx. 12 min.)/100°C/speed 1 without the measuring cup. Use steamer basket.

Mix pasta and sauce

Drain the pasta and add to the sauce in the mixing bowl. Stir in for 2 min./90°C/Reverse speed 1.

Arrange the pasta on plates and sprinkle with roasted pine nuts, grated Parmesan and fresh cress.
