Description

This pasta dish with vegetables and veal is a true flavour journey! Inspired by oriental flavours, it is scented with raz el hanout, turmeric and a little sweet pepper. The courgette, carrots and chickpeas provide a pleasant texture and a touch of freshness. Ideal for a comforting and flavourful family meal. Feel free to add other seasonal vegetables according to your desires. A little fresh chopped coriander at the end of cooking will bring a delicious herbaceous note. A complete and tasty dish, perfect for autumn evenings!

  • 1 peu sweet pepper
  • 0.5 c à c turmeric
  • Salt
  • Pepper
  • 1 peu neutral oil
  • 180 g small elbow pasta
  • 1 c à c raz el hanout
  • 1 courgette
  • 1 peu coriander
  • 1 Parsley
  • 1 onion
  • 4 gousses garlic
  • 1 c à s tomato concentrate
  • 2 carrots
  • 1 poignée chickpea soaked the day before
  • Veal pieces

Preparation of vegetables

Peel and cut the onion into quarters. Peel the garlic cloves. Wash and cut the courgette and carrots into pieces. Put the onion and garlic in the Thermomix bowl and chop 3 Sek./Stufe 5.

Sauté the onion and garlic

Add a little neutral oil to the bowl. Sauté the onion and garlic 3 Min./120°C/Stufe 1.

Addition of vegetables and spices

Add the courgette, carrots, tomato concentrate, sweet pepper, turmeric, salt, pepper and raz el hanout to the bowl. Mix 5 Sek./Stufe 4.

Cooking vegetables and chickpeas

Add a handful of chickpeas soaked the day before and enough water to cover the vegetables. Cook 20 Min./100°C/Linkslauf Stufe 1.

Cooking the pasta

10 min/212°F/Linkslauf Speed 1 100 Reverse

Add the small elbow pasta to the bowl. Cook according to the instructions on the pasta packaging, usually around 10 Min./100°C/Linkslauf Stufe 1. Check the cooking and add water if necessary.

Adding the meat and finishing cooking

While the pasta is cooking, brown the veal pieces in a pan with a little oil until golden brown. Add the cooked meat to the Thermomix bowl. Mix gently 2 Min./90°C/Linkslauf Stufe 1.
