Description

This creamy rosemary pasta is an absolute favorite for quick and easy meals! The fresh rosemary needles give the cream sauce a wonderfully aromatic and slightly resinous flavor that harmonizes perfectly with the salty Parmesan. Ingredients (6 ingredients)

  • 1 piece Shallot
  • 1 bunch Rosemary fresh
  • 2 tbsp Olive oil
  • 200 ml Cream
  • 3 tbsp Parmesan grated
  • 300 g Pasta

Prepare rosemary and chop shallot

Pluck the needles from the fresh rosemary and chop coarsely. Peel and quarter a shallot (or small mild onion). Have the prepared ingredients ready.

Chop shallot and rosemary

Prepare cream sauce

Meanwhile, cook 300 g pasta (e.g. spaghetti) al dente in a separate pot according to the package instructions and drain.

This rosemary pasta in creamy sauce is a dish that I keep coming back to when I need something quick but still special. I learned it a few years ago from a friend who lived in Tuscany. There, rosemary is an integral part of the cuisine and is often used for simple but flavorful dishes. The list of ingredients is deliberately kept short, but each individual ingredient plays an important role. The shallot, or a small, mild onion, provides a subtle sweetness and spice that perfectly complements the rosemary. The fresh rosemary is of course the star of the dish. Its resinous, slightly bitter flavors give the cream sauce a special depth and complexity. Make sure to use really fresh rosemary, as dried rosemary does not develop the same aroma. The olive oil serves as a flavor carrier and provides a pleasant texture. The cream forms the basis for the creamy sauce and the grated Parmesan provides a salty, spicy note and binds the sauce lightly. The pasta, preferably spaghetti or linguine, should be of good quality so that it absorbs the sauce well. When preparing in the Thermomix®, it is important not to chop the shallot and rosemary too finely, as they could burn when sautéing. The temperature when sautéing should not be too high so that the flavors can develop optimally. When adding the Parmesan, it is important that the cream is no longer boiling, as the cheese could otherwise clump. The pasta should be mixed gently with the sauce so that the pasta does not break. This dish can be varied wonderfully. For a vegetarian version, you can cut smoked tofu or halloumi into cubes and sauté together with the shallot. For a vegan version, you can replace cream with vegetable cream and Parmesan with nutritional yeast or vegan Parmesan. Other herbs such as thyme or sage also go well with this dish. If you like it a little spicier, you can add a pinch of chili flakes. Serve the rosemary pasta with a fresh salad and a glass of dry white wine. A crispy bread also goes well with it to soak up the remaining sauce. Fried mushrooms or cherry tomatoes are also suitable as a side dish. The rosemary pasta tastes best freshly prepared. Leftovers can be stored in the refrigerator and reheated the next day. The sauce can also be prepared separately and stored in the refrigerator. The pasta should then only be cooked and mixed with the sauce shortly before serving.
