Description

This juicy lemon cake is a classic for every coffee table. With the Thermomix® it is easy and quick to make. The fresh lemon provides a delicious taste. Ideal for spring and suitable as a dessert. The cake is prepared in about 70 minutes and is enough for 15 servings.

Ingredients (8 ingredients)

  • 265 g soft Butter
  • 180 g Sugar
  • 5 piece Eggs
  • 3 piece untreated Lemons
  • 300 g Wheat Flour Type 405
  • 1 tbsp Baking Powder
  • 1 tbsp Semolina
  • 200 g Powdered Sugar

Preparation (9 steps)

Mix Butter and Sugar until fluffy

Add 250 g Butter and 180 g Sugar to the mixing bowl and mix for 3 min./speed 3 until fluffy.

Stir in Eggs

Add 5 Eggs individually to the mixing bowl and stir in for 30 sec./speed 3 each.

Prepare Lemon Zest

Grate the zest of 3 untreated Lemons with the Wundermix WunderSlicer V2 and the fine disc. Place the WunderSlicer V2 on the mixing bowl lid and collect the lemon zest.

Mix and stir in dry ingredients

Add grated lemon zest, 300 g Wheat Flour Type 405 and 1 tbsp Baking Powder to the mixing bowl and stir in for 30 sec./speed 3.

Pour dough into pan and bake

Preheat the oven to 180 degrees (convection). Grease a loaf pan with the remaining Butter and sprinkle with 1 tbsp Semolina. Pour the dough into the pan and bake for 50 minutes.

Let the cake cool and prick

Let the cake cool in the pan. Prick the cake deeply about 20 times with a toothpick or skewer.

Soak with lemon juice

Save 1 tbsp of lemon juice, drizzle the rest of the juice from 3 untreated Lemons slowly over the cake. Let it soak for 12 hours or overnight.

Prepare glaze

Add the remaining 1 tbsp Lemon Juice and 200 g sifted Powdered Sugar to the mixing bowl and stir for 20 sec./speed 3 with the whisk.

Glaze and serve cake

Turn the cake out. Pour the glaze over the cake and let it set for 2 hours before serving.
