Description

This banana pecan tube cake is a delightful treat, perfect for a birthday celebration or a simple afternoon snack. The moist cake is infused with the sweet flavor of ripe bananas and the nutty crunch of pecans. It's a recipe I've been making for years, and it always disappears quickly! The combination of the soft cake and the crunchy nuts is simply irresistible. It's easy to prepare, especially with the Thermomix®, and the result is a delicious cake that everyone will love. Dusting it with confectioners' sugar adds a touch of elegance.

Ingredients (12 ingredients)

  • 0.33333333333333 cup butter
  • 1.25 cups white sugar
  • 2 piece eggs
  • 2 teaspoons vanilla extract
  • 1.25 cups mashed ripe bananas
  • 2 cups all-purpose flour
  • 1.25 teaspoons baking powder
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 cup nonfat plain yogurt
  • 0.75 cup chopped pecans
  • 2 tablespoons confectioners' sugar

Preparation (8 steps)

Preheat oven and prepare pan

Preheat oven to 350 degrees F (175 degrees C). Lightly grease and flour a 10-inch fluted tube pan. Set aside.

Cream butter and sugar

Add ⅓ cup butter and 1 ¼ cups white sugar to the Thermomix bowl. Mix for 2 Min./Stufe 4 until smooth and creamy.

Add eggs and vanilla

Add 2 eggs and 2 teaspoons vanilla extract to the Thermomix bowl. Mix for 30 Sec./Stufe 3 until well combined.

Add mashed bananas

Thermomix® Setting
20 Sec./Speed 2

Add 1 ¼ cups mashed ripe bananas to the Thermomix bowl. Mix for 20 Sec./Stufe 2 until incorporated.

Combine dry ingredients

In a separate bowl, combine 2 cups all-purpose flour, 1 ¼ teaspoons baking powder, 1 teaspoon baking soda, and ½ teaspoon salt. Set aside.

Add dry ingredients and yogurt

Add half of the dry ingredients to the Thermomix bowl. Mix for 20 Sec./Stufe 2. Add 1 cup nonfat plain yogurt and mix for 20 Sec./Stufe 2. Add the remaining dry ingredients and mix for 30 Sec./Stufe 2 until just combined. Use spatula to scrape down the sides if needed.

Fold in pecans

10 Sec./Linkslauf Speed 1 Reverse

Add ¾ cup chopped pecans to the Thermomix bowl. Mix for 10 Sec./Linkslauf Stufe 1 to gently fold in the pecans.

Bake the cake

Pour batter into prepared tube pan. Bake in preheated oven until a toothpick inserted into cake comes out clean, about 50 minutes. Cool 10 minutes in pan before removing to a wire rack to cool completely. Dust with 2 tablespoons confectioners' sugar before serving.
