Ingredients (14 ingredients)

  • 8 piece Potato
  • 1 pack Herrings
  • Sunflower oil
  • Vinegar
  • 1 piece Onion
  • 1 piece Shallot
  • 1 piece Carrot
  • 1 clove Garlic
  • 2 feuilles Bay leaf
  • 1 branche Thyme
  • 1 bunch Parsley
  • Herbs from provence
  • Salt
  • Pepper

Preparation (5 steps)

Marinade preparation

In the Thermomix bowl, pour a drizzle of sunflower oil, add 1 minced garlic clove, one or two slices of shallot, 2 bay leaves and 1 sprig of thyme. Mix gently. Let stand for a minimum of 24 hours for the flavors to develop.

Vinaigrette preparation

In a large bowl, add salt, pepper to taste and herbs from Provence. Pour in sunflower oil and vinegar according to your preferences (2 times more oil than vinegar). Mix with a spoon until a thick consistency is obtained. Let stand and macerate for one hour.

Potato preparation

Preheat the oven to 200°C. Prepare a large piece of aluminum foil for each potato. Place each potato on a sheet of aluminum foil, pour a drizzle of sunflower oil, salt and pepper.

Potato cooking

Carefully wrap each potato in several turns of aluminum foil. Place the potatoes on a baking sheet and bake for 1 to 2 hours, depending on the size of the potatoes and the desired doneness. Turn the potatoes every 20 minutes.

Final preparation

A few minutes before serving, place the cooked potatoes in a stainless steel dish. At the last moment, remove the aluminum foil (be careful, it's very hot). Serve with the herring fillets and the vinaigrette.
