Description

This Calabrian style pasta with fried eggplant is a true triumph of flavors! 'Nduja, a typical Calabrian salami, gives an irresistible spicy touch that perfectly matches the sweetness of the cherry tomatoes and the consistency of the fried eggplant. I often prepare it in the summer, when eggplants are at their best. The preparation is a bit longer than usual, but the end result is well worth it. Perfect for a dinner with friends or a Sunday lunch with the family. A rich and tasty dish that will win everyone over!

Ingredients (10 ingredients)

  • 320 g Pasta
  • 2 piece Large eggplants
  • 500 g Cherry tomatoes
  • 500 ml Frying oil
  • 50 g 'Nduja
  • 30 ml Extra virgin olive oil (EVO)
  • 2 foglie Bay leaves
  • 1 clove Clove of garlic
  • 1 bunch Basil leaves
  • 1 pinch Salt

Preparation (7 steps)

Preparation of the cherry tomatoes

Wash 500g of cherry tomatoes, cut them into 4 parts and set aside.

Cooking the cherry tomato sauce

Thermomix® Setting
15 min/Varoma/Speed 1 Varoma

Pour 30ml of extra virgin olive oil and 1 clove of garlic into the bowl. Add 2 bay leaves and the cut cherry tomatoes. Salt to taste and cook for 15 Min./Varoma/Speed 1.

Preparation of the eggplants

Wash 2 large eggplants, remove the stalk, cut them into slices about 2 cm thick and then into cubes. Collect them in a bowl, add a pinch of salt and mix. Set aside.

Frying the eggplants

Pour 500ml of frying oil into a pan and heat. When the oil is hot, fry the eggplants for about 5 minutes or until they are golden brown. Drain them and place them on absorbent paper to remove excess oil. Set aside.

Addition of the eggplants and 'nduja

Thermomix® Setting
2 min/194°F/Linkslauf Speed 1 90 Reverse

Remove the garlic and bay leaf from the bowl. Add the fried eggplants and cook for 3 Min./100°C/Speed 1. Add 50g of 'nduja and mix for 2 Min./90°C/Reverse speed Speed 1, until it is completely melted.

Cooking the pasta

Thermomix® Setting
1 min/194°F/Linkslauf Speed 1 90 Reverse

Cook 320g of pasta in boiling salted water according to the instructions on the package. Drain the pasta al dente and add it to the sauce in the bowl. Stir for 1 Min./90°C/Reverse speed Speed 1.

Plate the pasta and complete with fresh basil leaves.
