These beef olives with crunchy vegetables are a tasty and comforting dish, perfect for a family meal or a dinner with friends. Ingredients (8 ingredients)

  • 900 tranche(s) Steak
  • 1 kg Zucchini(s)
  • 1 poignée(s) Arugula
  • 3 piece Shallot(s)
  • 1 bouquet(s) Flat parsley
  • 1 c. à soupe Olive oil
  • Guérande salt
  • Salt pepper

Preparation (8 steps)

Preparation of the zucchini

Wash 1 kg of zucchini and cut them into small pieces. Place the zucchini in the steam basket.

Steaming the zucchini

Thermomix® Setting
20 min/Varoma/Speed 1 Varoma

Sprinkle the zucchini with Guérande salt and steam for 20 minutes. Fill the Thermomix bowl with 500 ml of water. Place the steam basket with the zucchini on the bowl.

Preparation of the arugula

Meanwhile, wash and drain 1 handful of arugula. Set aside.

Preparation of the shallots and parsley

Peel 3 shallots and chop them finely. Wash, dry and chop 1 bunch of flat parsley.

Mixing the herbs

Mix the chopped shallots and parsley in a salad bowl. Set aside.

Preparation of the beef olives

Lay each slice of steak flat on the work surface. Spread the shallot/parsley mixture on each slice of steak and roll them up on themselves, closing them. Tie them with food string.

Cooking the beef olives

In a pan, put 1 tbsp of olive oil that you spread with a paper towel. Add the beef olives and cook them, rolling them so that they brown well. Salt and pepper.

Plating

Divide the zucchini into six plates. Add the beef olives. Sprinkle with arugula. Serve immediately.
