Description

This recipe combines grilled peaches with a fine game liver mousse and caramelized hazelnuts. The preparation is partly done in the Thermomix® to stir the mousse creamy and caramelize the nuts. The dish is suitable as a festive appetizer or finger food and is prepared in about an hour. Ideal for lovers of game and fruity aromas.

Ingredients (16 ingredients)

  • 200 g Game liver
  • 20 g Butter
  • 100 g Butter
  • 50 ml Cream
  • 1 EL Cognac
  • 1 TL Mustard
  • 0.5 TL Marjoram
  • 1 Stück Onion
  • 1 Zehe Garlic
  • 50 g Hazelnuts
  • 20 g Honey
  • 4 Scheiben Baguette
  • Olive oil
  • 2 Stück Peaches
  • Salt
  • Pepper

Preparation (11 steps)

Chop onion and garlic

Put 1 small onion, peeled and quartered, and 1 clove of garlic in the mixing bowl and chop for 3 sec./speed 5. Scrape down with the spatula.

Sauté onion and garlic

Add 20 g butter and sauté for 3 min./120°C/speed 1.

Prepare game liver

Add 200 g of game liver, freed from tendons and in pieces, to the mixing bowl.

Chop game liver

10 sec/Speed 6

Chop the game liver for 10 sec./speed 6.

Refine mousse

Thermomix® Setting
20 sec/Speed 4

Add 100 g cold butter in pieces, 50 ml cream, 1 tbsp Cognac, 1 tsp mustard, 1/2 tsp marjoram, salt and pepper and stir for 20 sec./speed 4.

Puree mousse

Thermomix® Setting
30 sec/Speed 8

Puree the mixture for 30 sec./speed 8 until a fine mousse is formed. If necessary, scrape down with the spatula and repeat the process.

Cool mousse

Transfer the game liver mousse to a bowl, cover with cling film and refrigerate for at least 30 minutes.

Caramelize hazelnuts

3 min/122°F/Speed 2 122°F

Put 50 g hazelnuts in the mixing bowl and chop for 5 sec./speed 5. Then add 20 g honey and caramelize for 3 min./50°C/speed 2.

Prepare baguette

Drizzle 4 slices of baguette with some olive oil and toast briefly in a pan or in the oven.

Grill peaches

Halve 2 peaches, pit and grill on the grill or in a grill pan with the cut side down until lightly browned.

Arrange

Spread the grilled peaches with the game liver mousse, sprinkle with caramelized hazelnuts and serve together with the toasted baguette slices.
